Ethiopia is the country where coffee was first discovered. Today, many wild coffee plants still exist in the original forests for farmers to harvest. Ethiopia is a country plagued by poverty, drought, and constant civil war, but it remains one of the most important coffee-producing nations in terms of quality and yield, as well as the best and top-tier coffee producer in the past one to two years.

Ethiopia has two best producing regions: Yirgacheffe and Sidamo. Sidamo is located in a highland area in southern Ethiopia. Generally, most Mocha coffee is roasted using city roast. Sidamo has balanced acidity and appropriate thickness. In the Ethiopian region, people usually start their day with a cup of Mocha coffee to supplement their energy and vitality for the day.

Due to Ethiopia's backward grading system, coffee can be divided into special grades (usually referring to washed Yirgacheffe and Sidamo), grades 1, 2, 3, 4, and 5.

Coffee beans processed using the washed method have mild and low-key aromas, soft and understated lemon acidity, and high flavor consistency, winning with their mouthfeel. Coffee beans processed using the natural method have strong and prominent aromas, less noticeable lemon acidity, and complex and varied flavors, excelling in floral or fruity notes.

Ethiopian natural beans often contain impurities such as small stones or branches, so special attention should be paid during grinding. Despite these minor flaws, they don't affect the taste. Most notably, Sidamo's Mocha coffee has particularly low caffeine content, making it a naturally low-caffeine coffee. After drinking the mild taste of washed coffee, occasionally trying pure natural coffee to experience that wild and unrestrained desert charm is a good choice.

Ethiopia is currently the fastest-growing country in coffee production and development. Different producing regions create differences in coffee through processing methods, and even the same processing method can produce different aromas and tastes due to different processing techniques, often causing confusion. For example, natural beans from Yirgacheffe and Sidamo have different aromas. Yirgacheffe's natural beans have higher moisture content, mostly small coffee beans, with relatively low and stable aromas and thicker mouthfeel. Sidamo's natural beans have an impressive, strong strawberry aroma but a thinner mouthfeel.

Brewing Recommendation
