How to Perfectly Brew Guatemala Santa Rosa Estate Black Rose Coffee

FrontStreet Coffee's Pour-Over Reference: Weigh 15g of Santa Rosa Estate Black Rose coffee beans, grind them to medium fineness - slightly coarser than table salt. We use a BG grinder setting of 5R (60% standard sieve pass rate). Water temperature at 89°C, extracted with a V60 dripper.

Pour hot water from the gooseneck kettle in clockwise circles centered in the filter. Start timing when you begin brewing. Within 15 seconds, brew to 30g, then stop pouring. At the 1-minute mark, begin the second pour. Like the first pour, move in clockwise circles centered in the filter, avoiding the area where coffee grounds meet the filter paper to prevent channel effects.

Leave one circle between the outermost coffee grounds and the filter edge, then pour in circles toward the center. At 2 minutes and 20 seconds, you should have brewed to 220g. The brewing process is now complete.

Japanese Style Iced Pour-Over: Santa Rosa Estate Black Rose

Guatemala's Santa Rosa Estate Black Rose, light to medium roast, BG grinder setting 5M (67% standard sieve pass rate)

Use 20g of coffee grounds, 150g of ice cubes, and 150g of hot water. Water temperature should be 1°C higher than the normal 90°C recommendation for regular pour-over. For normal pour-over, use the Fuji 3.5 setting; for iced pour-over, grind slightly finer at Fuji setting 3.

Bloom with 40g of water for 30 seconds.

Pour in stages - first stage with 60g of water, second stage with 40g of water. Use a thin but high water column to stir with force, ensuring the coffee grounds tumble fully. However, be careful not to let the water level get too high or touch the filter paper at the edges.

The entire extraction time should be approximately 2.5 minutes (similar to the normal extraction time for 20g of coffee).
