Estate Story
Also located in the foothills of Baru Volcano in Boquete, from one side of this farm, you can see the distant Pacific Ocean landscape, while the other side is surrounded by nearby land mountains.
This region has an excellent natural environment, with moderate rainfall, monsoons, sunlight, and cloud cover, as well as temperature, all enabling farmers to produce exceptionally flavored organic coffee beans.
Ricardo Koyner, the farmer and owner of Duncan Estate, also produces some small-batch premium coffee beans within Panama. Koyner is dedicated to pursuing high-quality coffee beans, creating a high-yield organic farm that most producers cannot match.
The name Duncan comes from Ricardo's grandfather Alexander Duncan MacIntyre, who immigrated from Canada to Panama in 1913, making everything possible today. While in Canada, Alexander one day saw an article in a newspaper describing the pristine geographical environment of Boquete, Panama. He was filled with curiosity and decided to see Boquete for himself.
After arriving in Boquete, he quickly fell in love with the local customs and natural valleys. Since then, the Alexander family has been planting and processing coffee beans here, continuing for four generations.
During the harvest season, only 100% mature coffee fruits are hand-picked. Subsequently, at the farm altitude of 1700 meters, the coffee beans are naturally dried in a cool, dry climate environment. The dried beans are stored in wooden silos for at least 3 months, a process that allows all flavors to develop. Afterward, these coffee beans are carefully sorted according to size, weight, and color.
Kotowa Farm places great importance on protecting the primary forest around the plantation. They have planted over 500 local tree species to protect the diversity of birds in the forest. Additionally, the farm provides free medical services to employees and their families, and sets up childcare centers for the children of picking workers during the harvest season, providing three meals and school education.
Duncan Estate enjoys a unique microclimate and volcanic terrain. During the coffee growth period, rainfall is abundant, with distinct wet and dry seasons. It has fertile volcanic black soil and good drainage conditions. During coffee cultivation, no chemical fertilizers are used at all. Instead, cherry skins and pulp are used to create high-nutrient compost to nourish the coffee trees and give back to the land, creating the uniqueness of Duncan Estate's coffee flavor. The produced coffee beans are of excellent quality and have consistently achieved good results in BOP.
This Panama coffee bean uses a unique wine processing method. Coffee farmers hand-pick the most mature, sweetest coffee cherries, followed by 60 days of low-temperature slow drying. The processed coffee beans have high alcohol content, excellent sweetness, and rich, full-bodied flavor.
Brewing Guide
How to Brew Panama Coffee [Natural Duncan Estate]?
FrontStreet Coffee Pour-over Reference:
Weigh 15g of [Natural Duncan Estate] coffee powder and pour into a grinder for medium grinding. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (standard sieve pass rate 60%), water temperature 90°C, V60 filter cup for extraction.
Draw circles clockwise with the hot water from the pour-over kettle centered on the middle of the filter cup. Start timing when brewing begins. Brew the coffee to 30g in 15 seconds, then stop pouring water. When the time reaches 1 minute, pour water for the second time. The second pour is the same as before, drawing circles clockwise centered on the middle of the filter cup. The water flow should not hit the connection between the coffee powder and filter paper to avoid channel effects.
Leave a circle when brewing the coffee powder to the outermost circle, then brew circle by circle toward the middle. At 2 minutes and 20 seconds, the coffee should be brewed to 220g. The coffee brewing is complete.
