What Equipment is Needed for Pour-Over Panama Diamond Mountain Catuai Natural Coffee?
The Renowned: Panama Coffee Estate - La Esmeralda
La Esmeralda is situated in the outskirts of Boquete in southwestern Panama. The estate owners, the Peterson family, accidentally discovered a highly promising coffee variety: Geisha. After careful cultivation and planting by the estate, starting from 2004, the estate continuously won a series of coffee competition championships with this Geisha variety, standing unshakably in the global coffee market. Since 2008, Geisha has been independently auctioned, creating countless record-breaking high prices. In recent years, besides shining with the top-tier Geisha, La Esmeralda has actually launched more approachable green bean varieties, one of which is the Diamond Mountain series we introduced this year.
Diamond Mountain: The Star of La Esmeralda
'Diamond Mountain' is a star brand under La Esmeralda, primarily featuring the Catuai variety, complemented by some Typica and Bourbon varieties. The green beans are harvested from Jaramillo and Cañas Verdes, two of the four independent farms under La Esmeralda. These two independent farms possess excellent volcanic soil for coffee cultivation, and the original forests provide sufficient shade for the coffee trees. Due to these exceptional conditions, the produced green coffee beans feature rich fruit aroma, sweetness, and flavors of chocolate and fresh spices. 'Diamond Mountain' has become La Esmeralda's popular independent brand besides Geisha.
P.S., In addition to producing high-quality green coffee beans, La Esmeralda continuously pursues and implements sustainable management practices. The entire estate has Rainforest Alliance certification, ensuring that bird and wildlife habitats are not damaged by human activities. During post-processing of green beans, wastewater is also recycled and reused, ensuring clean water quality and forming a self-sufficient coffee estate ecosystem.
The exceptional ecological environment and green bean processing techniques have made the estate's other bean varieties, besides Geisha, deeply loved by everyone. Diamond Mountain is one of the star brands of La Esmeralda's Catuai variety, grown on the suburban hillsides of the Canas Verdes and Jaramillo regions within the Boquete specialty coffee producing area of Panama, at altitudes between approximately 1400-1700m. The high-altitude growing environment and rich volcanic mineral soil produce coffee beans with rich and complex fruit aromas, with noticeable chocolate, vanilla, and sweet citrus flavors.
How to Brew Panama La Esmeralda Diamond Mountain Natural Catuai
FrontStreet Coffee's Pour-over Reference: Weigh 15g of Panama La Esmeralda Diamond Mountain Natural Catuai coffee grounds, pour into a grinder for medium grinding. The ground particles should be slightly coarser than table salt. We use a BG grinder setting of 5R (60% standard sieve pass rate), water temperature of 90°C, and extract with a V60 dripper.
Pour hot water from the pour-over kettle in clockwise circles centered on the middle of the dripper, starting the timer when brewing begins. Within 15 seconds, brew the coffee to 30g, then stop pouring water. When the time reaches 1 minute, perform the second pour. During the second pour, just like before, pour in clockwise circles centered on the middle of the dripper. Avoid pouring water on the area where coffee grounds meet the filter paper to prevent channeling effects.
Leave one circle when pouring the coffee grounds to the outermost edge, then brew circle by circle toward the center. At 2 minutes and 20 seconds, brew the coffee to 220g to complete the brewing process.
