Don Pepe Estate: Panama's Premier Coffee Plantation
Don Pepe Estate is located on the slopes of Baru Volcano in the Boquete region of Panama, at an altitude of 1,600 meters. With an average temperature of 20°C and average rainfall of 98 inches, the fertile volcanic soil gives coffee from this region its rich acidity.
In Panama's humid forests, for over 100 years, this virgin land at 1,900 meters altitude and its fertile soil have been passed down through generations, producing high-quality coffee. This is the home of Don Pepe Estate coffee, where five generations of passionate coffee farmers have continued to the end, achieving quality and production peaks through the skill of the late Antonio Vásquez, affectionately remembered as Don Tony.
To achieve and maintain bean quality, Don Pepe Estate will only produce "pure varieties," separately planting various varieties to achieve the highest quality coffee cup. At Don Pepe, the following varieties are available: Caturra, Catuai, Bourbon, Typica, Java, and Geisha. These beans benefit from a year-round microclimate, with temperatures averaging 21°C and rainfall of 2,950mm, combined with volcanic soil to produce extraordinary aromas and flavors.
Adopting strict environmentally friendly processes, utilizing the latest developments in low-water consumption production equipment. The estate was originally planted by Don Enrique Vásquez, who was a pioneer and founder of the town and coffee cultivation in 1898.
Since then, for more than four generations, Don Tony has continued to produce high-quality coffee for the world's best roasters. Don Tony also allocated 10% of the land to preserve the first-growth tropical rainforest. With his environmental vision and quality-focused production, estate owner Don Tony ensures that Don Pepe will continue to grow and produce some of the world's best coffee for future generations.

How to Brew Panama Coffee [Don Pepe Estate Washed Catuai] Perfectly?
FrontStreet Coffee's pour-over reference: Weigh 15g of [Don Pepe Estate Washed Catuai] coffee powder, pour into a grinder for medium grinding. The ground particles should be slightly coarser than table salt—we use BG grinder setting 5R (standard sieve pass rate 60%). Water temperature 90°C, extracted with V60 filter cup.
The hot water in the pour-over kettle draws circles clockwise with the filter cup center as the focal point. Start timing when brewing begins. Within 15 seconds, brew the coffee to 30g, then stop pouring water. When the time reaches 1 minute, pour water for the second time. The second pour is the same as before, drawing circles clockwise with the filter cup center as the focal point. The water flow should not hit where the coffee powder meets the filter paper to avoid channel effects.
When brewing the coffee powder to the outermost circle, leave one circle, then brew circle by circle toward the center. At 2 minutes and 20 seconds, brew the coffee to 220g. The coffee brewing is complete.
