Ethiopia Gimbi Region | Natural Process Queen Sheba Local Heirloom Flavor?
According to records in the Old Testament Bible and the Quran, Queen Sheba was the ruler of the Kingdom of Sheba during the same period as King Solomon. At that time, her influence was strong, with territories spanning across Northeast Africa, present-day Yemen, and the Arabian region. Legend has it that the Kingdom of Sheba was extremely wealthy, with abundant precious metal deposits, which is why Queen Sheba's jewelry was always glittering with gold and appeared magnificent and noble. Queen Sheba admired King Solomon's wisdom and talent, and despite the Kingdom of Sheba's relatively strong position at the time, she actively proposed marriage to King Solomon. Although ultimately unable to fulfill her wish, it is said that when Queen Sheba returned to her domain, she was already carrying King Solomon's bloodline. The so-called "Solomon's Treasure," which is highly mysterious, is believed to partly refer to those precious collections given to King Solomon when Queen Sheba proposed marriage. The Kingdom of Sheba's territory at that time was mainly in today's Ethiopia, Eritrea, Sudan, Egypt, and Djibouti regions, which coincidentally happens to be what we recognize as the birthplace of Arabica coffee species, and even more so, a completely irreplaceable rich coffee gene treasure trove, much like the Kingdom of Sheba of that time.
Ethiopia mainly has eight major producing regions: Ekempti, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo, and Yirgacheffe. Yirgacheffe is located in the Gedeo region of southern Ethiopia. This region governs the relatively well-known areas of Yirgacheffe and Kochere. Because the coffee produced in Yirgacheffe has special and unique flavors that are widely loved, it has formed its own category in product classification and has always occupied a place in the global specialty coffee market.

Dripper: Hario V60
Water Temperature: 90°C
Grind Size: Fuji Rokus grinder setting 3.5
Brewing Method: Water-to-coffee ratio 1:15, 15g coffee grounds. First pour 25g of water for a 25-second bloom. Second pour to 120g, then pause brewing. Wait until the water level in the coffee bed drops to half before continuing to pour. Slowly pour until reaching 225g total water. Extraction time around 2:00 minutes.
Analysis: Using a three-stage brewing method to clearly distinguish the front, middle, and back-end flavors of the coffee. Because V60 has many ribs and drains faster, pausing the pour can help extend the extraction time.
