The Adame Gorbota Cooperative belongs to the Wenago region in Ethiopia, located about two kilometers southwest of Yirgacheffe town. The Adame Gorbota Cooperative currently has 533 members. Coffee smallholders near the cooperative transport their harvested coffee cherries from their small farms to the cooperative for unified processing. The traditional YCFCU processing procedures are all carried out at the processing plant, where coffee beans undergo 48 hours of static fermentation in water, followed by washing and drying on African raised beds. Grind Size: Fuji Rancilio grind setting 3.5

Brewing Method: 1:15 coffee-to-water ratio, 15g coffee grounds. First pour 25g water for 25s pre-infusion. Second pour to 120g water, pause and wait until the water level drops halfway, then continue slow pouring until reaching 225g total water. Extraction time approximately 2:00.

Analysis: Using a three-stage brewing method to clearly define the front, middle, and back-end flavors of the coffee. Because V60 has many ribs and faster drainage, pausing during pouring can help extend the extraction time.
