Bird Friendly & Organic Certified | Flavor Profile of Washed Bourbon, Caturra, and Catuai from Guatemala's Huehuetenango Region

The Danzhen Village Cooperative is composed of small farmers located in the Huehuetenango region of Guatemala. Currently, it has 330 small farmer members, of which 316 are local indigenous people. In 2000, they obtained Fair Trade certification, which improved the income and basic living conditions of small farmers, stabilized the regional economy, and reduced population outflow. The cooperative implements women's programs to improve women's nutrition and work skills training. The cooperative has also obtained Bird Friendly certification, which greatly helps protect the regional ecosystem.

"Guatemala" means "land of many trees" in ancient Mayan language. 98% of the coffee grown there is cultivated under tree shade, creating a bird-friendly ecological environment. With unique clean water sources and active volcanic geology, diverse microclimates create distinctly different flavors in coffee-producing regions.

Roast Profiles and Flavor Notes

Light Roast - City Roast:

Hazelnut flavor with blueberry aroma, grapefruit acidity is subtle and bright, smooth mouthfeel. The sweetness at this roast level is the fruity sweetness of hawthorn.

Medium Roast (General B):

Pecan aroma, acidity becomes very gentle with a slight upward lift at the end, thin mouthfeel, milk chocolate sweetness, aftertaste carries peanut powder residue.

Dark Roast (General C):

Chocolate replaces hazelnut aroma, acidity only appears when cooled, mouthfeel is moderately viscous and smooth, sweetness is the aroma from roasted malt sugar, delicate smoky flavor appears in the aftertaste.

When roasted to slightly strong (Full-City+ or dark), the chocolate and cocoa aroma is very attractive but the mouthfeel remains refined, clean, with subtle characteristics.

  • Dripper: Hario V60
  • Water Temperature: 90°C
  • Grind Size: Fuji Royal grinder setting 3.5
  • Brewing Method: Water-to-coffee ratio 1:15, 15g coffee grounds. First infusion with 25g water, steam for 25 seconds. Second infusion to 120g water, then stop pouring. Wait until the water level in the coffee bed drops to half before continuing to pour. Slowly pour water until reaching 225g total. Extraction time around 2:00.

Analysis: Using a three-stage brewing method to clearly define the front, middle, and back-end flavors of the coffee. Because the V60 has many ribs and faster drainage speed, stopping the flow can help extend the extraction time.
