Yunnan Small Bean Coffee
The cultivation history of Yunnan coffee can be traced back to 1892. A French missionary brought coffee seeds from abroad into Yunnan and successfully planted them in a valley in Binchuan County, Yunnan Province.
The main variety is Arabica, the so-called small bean coffee, commonly known as Yunnan small bean coffee in China.
Yunnan small bean coffee belongs to the Rubiaceae family, Coffea genus. The cultivation areas are mainly distributed in Lincang, Baoshan, Simao, Xishuangbanna, and Dehong in Yunnan, China.
Baoshan has an average temperature of 21.5°C, reaching up to 40.4°C, and is basically frost-free throughout the year. It is recognized as a producing area for small bean coffee. The small bean coffee cultivated here is characterized by being rich but not bitter, fragrant but not strong, with small and evenly sized beans, and a mellow, rich aroma.
Typica, this classic high-quality coffee variety, is the main cultivated variety for this batch of coffee. Typica coffee originates from Ethiopia and southeastern Sudan and is the most widely cultivated coffee variety in the Western Hemisphere. The top leaves of Typica are copper-colored, hence it is called red-top coffee.
The harvested berries are processed with a pulping machine to separate most of the pulp from the coffee beans, and then the parchment beans are guided to a clean water tank, where they are soaked in water for fermentation to completely remove the residual pulp layer.
Through washed processing, it presents distinct fruit acidity and a cleaner taste.

Based on some basic factors to determine whether a bean will be good, there are the following:

1. Look at the variety: Typica, native variety
We are reviewing specialty coffee. Blue Mountain and KONA are also Typica varieties. Returning to bloodline theory, we have to admit that good bloodline accounts for a large proportion of a good bean.
2. Look at the cultivation height
For Arabica, 1200 meters is the quality watershed. This Yunnan Baoshan Typica is cultivated at 1200 meters.
3. Look at the processing method
Looking at processing methods, there are basically two directions: one is cleaner, such as washed processing, and the other is richer in flavor, such as natural processing.
4. Look at the roasting

Smooth entry, with Asian herbal plant aroma, lively and bright acidity. Both cheeks produce saliva, with soft acidity, good balance of richness, and rich layers. Honey and sugarcane flavors are obvious, and after complete cooling, brown sugar flavor emerges.
