Yemeni Coffee - Mattari

Although Ethiopia is the birthplace of coffee, Yemen was the first Arab country to begin cultivating coffee. Today, Yemen still uses traditional methods to grow coffee, which are not much different from the methods used in 1600 AD. Coffee is grown at altitudes of 3,000-7,000 feet, and irrigation systems built 400 years ago are still in use. This irrigation system collects rainwater and distributes limited water resources evenly. Due to limited water sources, all coffee is processed using the natural sun-drying method.

The name "Mocha" originated because early Yemeni coffee was mainly exported from the port of Mocha in Yemen. Although this port closed in 1800 AD, the name "Mocha" for coffee continued to be used.

There are two main famous types of Yemeni coffee: Mattari and Sanani. Mattari coffee is richer and has a cocoa flavor, while Sanani coffee has a more wild character and fruity acidity.

Pour-over Reference

Use a V60 dripper, 15g of coffee with 30g of water for a 35-second bloom, extract with 89-90°C water temperature at a 1:15 ratio, medium-fine grind (Fuji 3.5). For the second pour, add water to 140ml and stop, wait for the water level to drop, then slowly pour again with even speed, keeping the water level not too high. Add water again to 225ml and stop. Extraction time: 2:00 minutes.

During brewing, it quickly brings out the attractive aromas of fruit and spices. After tasting, you can feel the chocolate-rich and creamy texture.
