Royal Coffee

The best coffees from Costa Rica seem to come mostly from small processing mills scattered throughout the main coffee-growing regions, including Tarrazú and the Western Valley. This so-called coffee revolution originated 15 years ago, dramatically changing roasters' and importers' perceptions of Costa Rican coffee. Centered around processing mills that collect coffee cherries from surrounding small farms for processing, these farms are mostly small communities or family-owned operations that grow coffee on their small farms or land, with all coffee being processed and dried by a single small processing mill. The quality and flavor of Royal Coffee are quite unique, largely thanks to the cooperation between coffee producers and ourselves. The San Román processing mill primarily uses washed processing methods and is known for coffee with intense, rich flavors and solid body. Coffee cherries are hand-sorted, with farmers removing overripe or unripe cherries before processing. A 3-disc Aagaarde depulper is used to remove the skin and pulp, then machines sort the coffee beans into three grades based on density. Grade 1 and 2 beans are fermented separately, while Grade 3 consists of lower-quality beans. The beans are fermented in the shade for about 24-36 hours, then washed after fermentation and sorted again by density in the washing channels. Finally, the beans are randomly soaked in clean water overnight.

Hummingbird Coffee

The Tarrazú region is located in southwestern Costa Rica, near Poás Volcano, facing the Pacific Ocean, and possesses unique microclimate conditions, including fertile volcanic soil and ideal climate, sunlight, and humidity, all conducive to producing perfect red cherries. The production process uses entirely manual weeding and nature-friendly farming practices, completely avoiding chemical fertilizers and pesticides. Coffee produced in this manner exhibits comprehensive regional representative flavors: sweet wet aroma, full body, medium acidity, with a delicate, clean aftertaste of stone fruit, spices, and sweetness. All red berries are hand-picked when fully ripe, and the entire processing process is strictly controlled. At the processing station, washing, fermentation, and drying are performed. The processed parchment beans are then sent to drying racks for sun-drying until the moisture content of the entire coffee batch is consistent before hulling for export. This is the latest dry-washed processing method, which retains about 0-10% of the coffee pulp and mucilage, allowing for slight fermentation followed by up to 25 days of natural drying, highlighting the meticulous craftsmanship and terroir conditions of Costa Rican's micro-processing mills. The perfectly balanced fermentation level achieves an excellent balance between clarity and complexity in the coffee.
