The high mountain region of northern Peru is not only mysterious but also shrouded in clouds and mist year-round, producing many high-quality organic coffees. This organic Typica variety comes from the Amazon Cooperative in the north, whose members secured three positions in the first competition, including 5th place for Orchid Estate; if you prefer delicate and understated organic coffee, then Peru is your answer!

The full name of the Amazon Cooperative is Asociación de Productores de Cafés Especiales - Aprocoyce de Amazonas, which can be translated as: Specialty Coffee Producers Association - Amazon Cooperative. After more than 10 years of preparation and diligent efforts by dedicated individuals, Peru finally joined the Cup of Excellence competition lineup! As with tradition, the international judges for the first competition were by invitation. Amazon Organic Beans from Amazonas Region

The Amazon organic beans come from the Amazonas region. Previously, most Peruvian beans came from the central Chanchamayo province, with only a small portion from the five northern regions. Different regions offer different flavor profiles. The Amazon Organic Cooperative's unique vanilla aroma is comparable to high-altitude Bolivian growing regions! It is not only a Fair Trade and Rainforest Alliance registered cooperative but also has obtained tripartite organic certification from the United States, European Union, and Japan.

Cooperative Details

Currently, the cooperative has 280 member families growing coffee varieties: Typica, Caturra, and Catimor. The harvest season is mainly from June to October. The average cultivation scale of cooperative members is less than 1.5 hectares, with cultivation and harvesting done manually. Under the guidance of experts invited by the association, farmers have learned to harvest ripe red cherry fruits and transport them to the cooperative's washing station for processing on the same day. They perform washed method fermentation and subsequent washing and sun-drying operations. The final sun-drying mainly uses patios or African-style raised beds for natural sun-drying. Cooperative members are willing to invest effort to improve quality and have received support from international buyers and affirmation for long-term purchasing commitments.

Peru Coffee Beans Source

Peru coffee beans come from the Fair Trade certified cooperative CECANOR (Central de Servicios Cafetaleros del Nor Oriente). Established in 1999 and located in Peru's Lambayeque region, over 50% of members are small producers in extremely impoverished areas. Through community development funds, the cooperative purchases production equipment and establishes cultivation technology plans, improving both quality and quantity of coffee beans year by year. It is now one of the important members of Peru's national coffee organization.

Gender Equality Initiatives

Twenty percent of coffee farmers are women. CECANOR cooperative values gender equality, providing women opportunities to participate in public affairs and serve as community leaders. Through plans established by CECANOR cooperative, not only has the status of women in Peru been elevated and domestic violence treatment reduced, but local men have also recognized the benefits of gender equality. When women receive better education, it has positive impacts on both families and society as a whole.

Fair Trade Benefits

Fair Trade provides producers with fair purchase prices while also generating additional community development funds that can be invested in education, healthcare, production tools, and more. These improvements can enhance the lives of families and children. When we choose Fair Trade products, we are bringing a better future to producers and choosing more just and safe products for ourselves.

FrontStreet Coffee Brewing Recommendations:

Dripper: Hario V60

Water Temperature: 90°C

Grind Size: Fuji Rancilio 3.5

Brewing Method: 1:15 coffee-to-water ratio, 15g coffee grounds

First pour 25g water for 25s bloom, second pour to 120g then pause, wait until water level drops halfway, then continue slow pouring until reaching 225g total water. Extraction time around 2:00.

Analysis: Three-stage brewing method

Using three-stage brewing to clearly define the front, middle, and back-end flavors. Because V60 has many ribs and drains quickly, pausing during pouring can extend extraction time. La Paz
