Flavor Characteristics:
The dry aroma presents orange caramel with hints of pickled plum.
Upon entry, the syrup-like smooth texture carries notes of hawthorn and plum aromas.
There's also sweet and juicy orange juice.
It possesses a sweet and sour sensation reminiscent of sour plum soup, with excellent layering.

Washed Processing Method:
Harvest ripe red coffee cherries.
In the first stage, clean with clear water and remove unripe berries.
After removing the pulp, undergo 24 hours of dry fermentation.
In the second stage, soak in clear water for 20 hours.
Wash away residual pulp remaining on the parchment beans.
Place on racks in the farm courtyard for several days of drying.
Then transport to the Ubud processing station at approximately 800 meters altitude.
Finally, undergo natural drying on racks at the Ubud processing station.
Stir the parchment beans on the racks daily to maintain ventilation.
Due to the drier weather conditions in the Ubud area compared to other regions.
After about 12-15 days when moisture content is consistent.
Remove the parchment hull.
Then perform final manual sorting to remove defective beans.
To improve the quality and flavor of the green coffee beans.
The Story Behind the Coffee:
In traditional Balinese culture, coffee has been regarded as a cheap beverage ingredient.

They are also the only coffee shop in the area with this certification.
The coffee shop has two roasters: 1kg and 4kg.
All coffee in the shop comes from high-quality green beans from local or nearby producing areas.
(For example: Java, Sulawesi, New Guinea, Flores) etc.
The success of the coffee shop gave them greater motivation.
To pursue high-quality coffee sources.
Several years ago, local Balinese green coffee beans.
Were all processed by farmers in the Kintamani mountain area.
But every year, whether due to weather factors, berry quality, processing environment, and various other factors.
It always made it difficult for them to control the quality of green beans each year. Since 2015.
Rodney decided to build his own processing station in his front yard next to the coffee shop.
When the harvest season arrived last year.
They went to the Kintamani area at 1400 meters altitude to purchase high-quality coffee berries.
After partial preliminary processing.
They were transported to the more stable Ubud area at 800 meters altitude for final processing.
