Estate Introduction:

Hambela Estate is located in the Guji Zone, which has become one of the important development trends in Ethiopian coffee in recent years. Shakisso is a well-known coffee variety from this region. Hambela Estate, situated at an altitude of 2,150 meters, maintains the natural balance between pristine forest and environment.

They only harvest and select fully ripe, bright red coffee cherries - a practice that is extremely difficult to achieve in Ethiopia's smallholder system, where selection typically relies on manual sorting on drying racks. The natural processing here employs the most rigorous and meticulous methods, with cherries spread only in a single layer on drying racks, and the drying schedule strictly controlled to approximately 18 days.

This single-layer stacking provides the perfect convection and drying environment for coffee cherries - a method that everyone knows is optimal but consumes the most space and is least efficient for production capacity. Proper slow drying allows coffee cherries to develop optimal water activity during the drying process, resulting in excellent flavor development and enabling green beans to maintain longer storage during the seasonal cycle. However, this approach extends the production time required for each batch. Adopting such drying techniques not only depends on favorable weather conditions but also requires the producer's willingness to invest.
