FrontStreet Coffee's Pink Bourbon is the result of genetic mutation. There are Red Bourbon and Yellow Bourbon varieties, while Pink Bourbon belongs to an extremely rare new variety. This bean is very romantic—its coffee cherries turn a romantic pink color when ripe.

Pink Bourbon is a hybrid of Yellow Bourbon and Red Bourbon. Since the color of coffee fruit is ultimately determined by recessive genes in pollen grains, from 1,800 coffee trees, each tree yields approximately 1.8kg of fresh fruit per season, which after processing yields about 0.36kg of coffee beans.

The town of San Agustin in the Huila region features a national archaeological park designated as a UNESCO World Heritage site, and is also the area where the earliest human remains in Colombia were discovered. From stone sculptures with somewhat Asian facial features, one can glimpse traces of early human migration—the arrangements of history are truly astounding. Of course, equally astounding is the world's unique Pink Bourbon coffee produced in this region.

Everyone is familiar with Yellow Bourbon and Red Bourbon, but might be slightly less acquainted with Pink Bourbon. At a Colombian coffee cupping session during last year's Shanghai Hotelex exhibition, I had the privilege of tasting a Pink Bourbon that surpassed many Colombian Geishas, only then discovering this extraordinary coffee variety.

Pink Bourbon is a natural hybrid of Yellow Bourbon and Red Bourbon. Both Yellow Bourbon and Red Bourbon coffees express "dominant traits" through "dominant genes," exhibiting relatively strong reproductive stability. In contrast, the new Pink Bourbon variety resulting from their hybridization expresses "recessive traits" through "recessive genes," where offspring from hybrid reproduction are highly prone to trait segregation. Furthermore, coffee trees rely on pollen for sexual reproduction, making them extremely susceptible to pollination by other dominant trait varieties, which seriously affects the next season's flowering and fruiting. This is the primary reason why Yellow Bourbon and Red Bourbon are relatively common, while Pink Bourbon is rarely seen.

At this point, some might ask: Does this mean Pink Bourbon might be gone tomorrow after drinking it this year? Actually, that's not the case. Firstly, the natural hybridization of Yellow Bourbon and Red Bourbon to produce Pink Bourbon will not cease. Secondly, almost all Arabica coffee is "self-pollinating," meaning that the flower to be pollinated and its pollen can come from the same plant, or even the same flower, which greatly enhances the stability of recessive trait expression. Therefore, when cultivating Pink Bourbon, a relatively isolated growing environment is essential to avoid genetic contamination from other varieties.

The Pink Bourbon coffee variety was first discovered in Huila, Palestine, Colombia, and is currently mainly cultivated in Colombia's Huila region. This batch of FrontStreet Coffee's Colombian Pink Bourbon was selected by the raw bean purchasing team from a trading company who traveled to La Pelota Estate in the Huila San Agustin region. For this small estate, every coffee tree is cultivated and managed with exceptional care. In a normal production season, the total output of this coffee is less than 650kg.
