When it comes to "90+," many people might first think of scores, but in the coffee world, mentioning 90+ always sparks heated discussions! The conversation typically revolves around: What new beans has 90+ released? Have they used any novel processing methods? Today, FrontStreet Coffee will share what exactly this 90+ is all about!

What is 90+?

90+ (Ninety Plus) is the name of an American green coffee company. In coffee cupping, it represents a score of 90 or above, generally only achievable by exceptionally high-quality beans. Therefore, people often interpret that the 90+ company's mission is to produce only beans scoring above 90.

Of course, this interpretation isn't without reason—the beans produced by 90+ company are indeed outstanding. For example, the Eleta with longan and spice flavors, or Juliette with grape and champagne notes that FrontStreet Coffee currently sells, are both produced by 90+ company. When tasted alongside other beans, people can easily identify them as belonging to the 90+ series coffee beans, as their uniqueness is irreplaceable elsewhere! This uniqueness is all thanks to 90+'s self-established production system: Profile Processing.

90+ Profile Processing

As mentioned earlier, 90+ is the name of a green coffee company, where "green coffee" refers to unroasted coffee beans—in other words, a green coffee merchant. What sets 90+ apart from other green coffee merchants is the Profile Processing established by its founder Joseph Brodsky at the company's inception.

Typical green coffee merchants, when purchasing beans, usually follow the same approach as we do: first tasting the beans through cupping (drinking), then procuring high-quality coffee beans that taste good. This method involves directly acquiring quality green beans produced by others for resale. What makes 90+ unique is that they didn't intend to only be responsible for the purchasing process—they wanted to handle everything from bean selection and cultivation to processing themselves, essentially creating their own high-quality green coffee beans! Thus, after the company's founding in 2006, this plan was set in motion!

Initially, 90+ company wasn't large-scale and lacked sufficient funds to participate in all aspects of green coffee production. Therefore, they could only start with coffee processing, since they held the technology to control flavor expression. The specific approach was to purchase freshly picked coffee cherries from nearby coffee farmers, bring them back to the processing plant for refined post-processing, and in this context, Aricha and Beloya were born.

These two beans possessed extremely rich fruit flavors and caused a sensation upon release, allowing 90+ to gain tremendous recognition in their debut! With this fame naturally came substantial income, which meant they now had the funds to involve themselves in other aspects of green coffee production! So, leveraging this momentum, 90+ began selecting potential coffee farmers and gradually stepping into every stage of green coffee production. Ultimately, 90+ could provide varying degrees of guidance to coffee farmers and processing plants based on the flavor profiles they wanted to achieve, enabling them to better assist in gradually adjusting the beans to match their originally intended flavors.

However, 90+ wasn't satisfied with this. They would also conduct additional screening of the produced beans until finding those that best matched their new vision before releasing them for sale! Therefore, it can be said that the reason 90+ company's bean quality can be maintained at top-tier levels relies not on luck or opportunism, but on the results they've achieved through diligent maintenance, as well as their consistently upheld core values.

90+ Estates

By 2009, 90+, having achieved great success in Ethiopia, returned to Panama with years of accumulated technology and experience to establish the "90+ Geisha Estate." Since they hadn't found bean varieties in Ethiopia that could compare to Geisha, they decided to directly use Geisha and apply their years of technology to it, making Geisha surpass Geisha! Five years later, in 2014, this estate finally began producing coffee beans, and thus the 90+ series was born! Both the Eleta Geisha and Juliette Geisha mentioned earlier by FrontStreet Coffee come from this 90+ series!

Brewing Recommendations for 90+ Geisha Coffee

Grind Size: Fine sugar size (80% passing through #20 sieve)

Since both beans belong to 90+ special processing, FrontStreet Coffee speculates after tasting that they likely underwent anaerobic natural processing, so we recommend using a finer grind to achieve proper extraction for these faster-draining beans!

Fold the filter paper to fit snugly with the dripper, wet it with a small amount of water to make it adhere better, and pour out the water from the server. Then add the coffee grounds and tap gently to distribute the powder evenly. For the first pour, gently inject 30g of water for blooming, with a blooming time of 30 seconds. For the second pour, inject to about 135g of water, circling evenly and steadily outward. Then wait for the coffee liquid to drop, and when it reaches halfway, inject the final pour to 225g. Wait for all the coffee to finish dripping—typically, the total extraction time is around 2 minutes, and a cup of 90+ Geisha coffee is ready!

Fast forward to 2019, after the Geisha Estate, 90+ company acquired another plot of land to establish a new 90+ estate. This plot is located near the Barú Volcano, so 90+ named it "90+ Barú Estates" (Ninety Plus Barú Estates). With the nourishment of volcanic soil, we believe 90+ will be able to produce even more delicious coffee beans!
