Ethiopian Coffee Growing Regions
Ethiopian coffee mainly has eight major producing regions: Ekempti, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo, and Yirgacheffe.
Sidamo's Diverse Coffee Flavors
The coffee flavors of Sidamo are extremely diverse because different soil compositions, regional microclimates, and countless native coffee varieties create obvious differences and characteristics in the coffee produced by each town and region.
Hambela Estate
Hambela Estate, whose owner Aman received a Western education and had complete Western corporate experience, surprisingly returned to Ethiopia and served as the Chief Operation Officer of ECX before establishing his own coffee production company. Based on the principle of neutrality in official institutions, he could not intervene in production or business aspects during his tenure. After stepping down from his position, he could finally realize his ambitions. He selected two locations in Ethiopia: one is Gedeb, and the second and most important is this Hambela Estate.
Hambela Estate is located in the Guji region. The rise of the Guji region can be said to be one of the important development trends in Ethiopia in recent years. Shakisso is a well-known example, but the operational model of Hambela Estate is unique and completely on another level. The rise of the Guji region can be said to have its inherent advantages.
To reach Hambela Estate, one must first pass through almost the entire Yirgacheffe region. Starting from Yirgacheffe town and heading south, after passing the intersection leading to Kochere or Chelelektu, choose the left path to continue southeast. Before reaching Gedeb town, turn left to head east toward Guji. At this left turn, you are already more than an hour's journey from Yirgacheffe town.
Precision Processing Methods
Harvesting and selecting only fully ripe bright red cherries is already the most basic requirement (in fact, this is very difficult to achieve in Ethiopia's smallholder system, where operations generally still rely on manual sorting on drying racks). The natural processing here adopts the most precise meticulous operations, so the cherries on the drying racks are only laid in a single layer thickness. The drying schedule is strictly controlled at about 18 days. We gave this method a simple name (SLD - Single Layer Drying/Slow Drying).
Single-layer stacking provides the most perfect convection and drying environment for coffee cherries, which everyone knows, but it is also the most space-intensive and least production-friendly method. Proper slow drying allows coffee cherries to develop optimal water activity during the drying process, not only resulting in excellent flavor development but also allowing green beans to maintain longer storage during the harvest season cycle. However, this approach extends the time required for each batch production. Adopting such drying processes not only depends on favorable weather conditions but also requires producers' willingness to invest.
