The Essence of Coffee Culture

What is the standard for evaluating "good coffee"? I believe the standard for good coffee is: finding the taste that suits you best.
Yunnan's Arabica Heritage
Why come to Yunnan to find small-grain coffee? Yunnan's small-grain coffee is very famous. Small-grain coffee is of the Arabica species, originally from Ethiopia or the Arabian Peninsula, and is distributed in China in provinces such as Yunnan and Fujian.
The main production area is in Yunnan, so China's main coffee bean production area is in Yunnan. Yunnan small-grain coffee is rich but not bitter, fragrant but not strong, with a hint of fruitiness. Its cultivation techniques and coffee flavor are widely recognized by experts.
The History of Baoshan Coffee
After the founding of New China, the development history of Baoshan's coffee industry mainly went through four stages:
First Stage: Initial Development
The first stage was the initial development phase. In the 1950s, Baoshan small-grain coffee was successfully promoted and planted on a large scale in Lujiangba. By 1960, the city's coffee planting area reached nearly 10,000 mu.
Second Stage: Decline
The second stage was the decline phase. In the early and mid-1960s, due to market and disease impacts, planting began to shrink. By the late 1970s, the city's coffee planting area was only 0.3 mu.
Third Stage: Restart
The third stage was the restart phase. In the late 1980s, with the United Nations Development Program's assistance projects in Yunnan and the participation of professional coffee production groups like Nestlé and Maxwell House, coffee prices rose, reaching up to 30 yuan/kg. Baoshan coffee started again, and by 1997, the city's coffee planting area reached nearly 30,000 mu.
Fourth Stage: Rapid Development
The fourth stage was rapid development. Since the implementation of the province's biological resources development project, Baoshan's coffee industry has experienced rapid development.
Baoshan Coffee Culture Festival
The Second Baoshan Coffee Culture Festival has opened! In Xinzhai Village, known as the "First Village of Ten Thousand Mu of Coffee" at the foot of Gaoligong Mountain, today's events include the Gaoligong Mountain Small-Grain Coffee Brewing Competition and professional coffee cupping sessions.
At the venue, there are displays and tastings of locally owned coffee beans, and participants are competing. The whole place is filled with the aroma of coffee! To find China's most beautiful coffee, start with the Baoshan Coffee Culture Festival. Drink, drink, drink!
Xinzhai Coffee Base
Xinzhai Coffee Base, located on the eastern foothills of Gaoligong Mountain, grows famous small-grain coffee. The coffee planting area is situated at elevations of 1,000-1,500 meters. The base has an average annual temperature of 21°C and annual precipitation of 700 to 1,000 millimeters. The natural conditions such as altitude and climate are very suitable for coffee growth. It is the core planting area for "Baoshan Small-Grain Coffee," a product with national geographical indication protection, producing over 1,100 tons of coffee beans annually.
Coffee Harvest in the Mountains
Deep in the mountains of Gaoligong Mountain, there is a small town where everyone knows how to grow and drink coffee. We met Lisu and Dai girls picking coffee in the mountains. They pick very quickly, filling a small bamboo basket in no time, singing while they work. The mountain songs are beautiful and the people are lovely, smiling like sunshine, with faces as rosy as coffee cherries.
From Cherry to Bean
Fresh coffee fruits are also called coffee cherries, and indeed they are red and very much like fresh, ripe cherries. Everyone is curious about how Yunnan small-grain coffee transforms from red coffee cherries to brown coffee beans.
At Hemei Gezhi Coffee, I had first-hand, close contact with processing operations such as hulling, washing, and sun-drying. I learned about how the coffee beans we usually drink for coffee are produced. At Jinglan Coffee, I visited and learned about the production and packaging processes.
The Art of Coffee Roasting
Depending on the degree of roasting and brewing methods, coffee flavors will vary slightly. I just want to say that freshly roasted coffee smells amazing! To meet market demands and coffee consumption needs, besides selling raw coffee beans, local well-known brands Hemei Gezhi and Jinglan also have their own factories to process coffee and produce instant coffee.
Coffee Culture in Baoshan
Drinking coffee in cafés at Chinese coffee production sites offers a unique flavor. In Baoshan city, there is a "Biden Coffee" shop, which means "us" in the Dai language, signifying "our coffee." Baoshan also has such atmospheric coffee houses.
What surprised me is that Baoshan is not just a coffee production area, not just about cultivation and processing. Biden Coffee has created such a coffee culture museum, allowing everyone to understand coffee culture at the coffee production site. The first floor is a coffee culture corridor, introducing knowledge about coffee.
The Famous Kopi Luwak
And what exactly is the world-famous Kopi Luwak? This time, I visited the Guoxin Kopi Luwak Coffee Farm in Yunnan's Baoshan. In recent years, we have had our own country's production of Kopi Luwak. As for what Kopi Luwak is, it's made when civet cats eat coffee fruits and excrete the coffee beans intact. People extract the coffee beans from their feces and process them.
Palm civets have similar characteristics to civet cats but have no scent glands, and are also used to produce Kopi Luwak. This coffee farm produces Kopi Luwak from palm civets. The palm civet housing has strict hygiene standards, and entry and exit require disinfection. Civet cat coffee is more common in Indonesia. According to the owner of Guoxin Coffee, because civet cats are nationally protected animals, it's not easy to obtain breeding permits in China.
Bringing Yunnan Coffee to the World
And good coffee must have good channels to leave Yunnan. The Baoshan E-commerce Service Center was established in early 2016, affiliated with the Baoshan Municipal Commerce Bureau. It is a third-party service platform for Baoshan to promote e-commerce development and undertake government extension functions. The center covers an area of about 1,588 square meters, with more than 168 e-commerce enterprises settled in the park.
The special exhibition hall in the park is a display and sales platform for specialty products from Baoshan's four counties and one district, currently featuring over 300 types of products. The park has a dedicated coffee display center and experience center, with professional coffee brewing equipment. The center is staffed with professionally trained baristas who can perform coffee brewing demonstrations for visitors.
