The Secret of Blue Mountain Coffee
The "secret" behind Blue Mountain Coffee's pure flavor: all their coffee trees grow on rugged mountain slopes, making harvesting extremely difficult - only skilled local female workers can handle the task. Selecting perfectly ripe coffee beans during harvest is crucial, as underripe or overripe beans affect coffee quality. After harvesting, coffee beans must be hulled the same day, then fermented for 12-18 hours. Afterward, the beans undergo washing and sorting. The next step is drying, which must be done on concrete floors or thick blankets until the beans' moisture content drops to 12%-14%. They are then stored in dedicated warehouses. When needed, they are taken out for roasting and then ground into powder. These procedures must be strictly controlled, otherwise the coffee quality will be affected.
Shade trees planted around the coffee are also a major feature of Blue Mountain Coffee. Shade trees are typically banana trees or Jamaica's native Ackee fruit trees, which protect coffee trees from harsh sun exposure and help with soil and water conservation. Taking care of coffee trees requires considerable patience and attention - they must be pruned regularly, removing old trunks to encourage new growth, and constantly monitoring fruit development, removing any poorly developed ones to avoid wasting nutrients.
All Blue Mountain Coffee harvesting is done manually. Workers must traverse between bushes on steep slopes, picking ripe coffee cherries one by one. Since coffee cherries on the same tree mature at different rates, harvesting often requires dozens of rounds to collect all coffee, making the entire process extremely laborious.
After harvesting, the cherries must first undergo floating water selection, then be processed using the washed method to remove fruit skin and mucilage, revealing the coffee beans inside, which are sent to processing plants for centralized processing. During the coffee harvest season, the wet coffee beans after washing (called wet parchment) are spread across squares beside processing plants like grain drying, receiving sunlight blessings.
After the coffee beans are dried, they undergo strict manual selection and machine grading before being packaged for export. Blue Mountain Coffee's use of wooden barrel packaging instead of regular burlap bags is also a distinctive feature.
All exported Blue Mountain Coffee must undergo detailed inspection by the Jamaica Coffee Industry Board. Only coffee that passes the professional quality control personnel's Cupping Test can enter the world market.

There are three grades of coffee from Jamaica's Blue Mountain region:

Typically, only coffee grown between elevations of 457 to 1,524 meters can be called Blue Mountain Coffee.
Coffee grown between elevations of 274 to 457 meters is usually called Jamaica Prime Coffee Beans. In terms of price, Blue Mountain Coffee is several times more expensive than High Mountain Coffee.
