The Art of Pour-Over Coffee
The advantage of pour-over coffee is that it's not picky about coffee beans at all. Regardless of which country or region the coffee beans come from, you can taste the pure flavor, aroma, and layers of that particular coffee.
However, there's an important prerequisite to note: coffee has a shelf life, and once coffee is ground into particles or powder, the surface area exposed to air increases, accelerating oxidation and causing the loss of aromatic compounds. Unless you're traveling and unable to bring all your pour-over equipment, it's recommended to always grind fresh and brew immediately. This way, you can truly appreciate the deliciousness within the coffee.
Understanding Coffee Freshness
Before buying coffee, are you still looking at the expiration date on the packaging? We need to tell you another important fact: the optimal tasting period for coffee is not equal to its expiration date. What you should pay attention to is the roasting time.
The roasting date of coffee beans represents freshness. Typically, freshly roasted coffee beans within 2-3 days are good choices. However, buying fresh immediately after roasting is actually not when the beans taste their best. Besides the roasting smoke and the beans' own aroma, coffee beans continue to release carbon dioxide (degassing) for about 48 hours after roasting. Therefore, brewing immediately after roasting actually results in poor flavor.
It's recommended to purchase about two weeks' worth of coffee beans at a time. For coffee beans stored at room temperature, it's also recommended to use them within two weeks when they have the best flavor and aroma.
Choosing Your Coffee Profile
Floral vs. Rich
How do you choose freshly roasted coffee beans? Are there principles for selecting freshly roasted coffee beans? Facing various coffee varieties from around the world, many people get lost in the coffee map. We recommend selecting according to your personal taste and preferences when purchasing. If you prefer more floral notes, you can choose Ethiopian, Guatemalan, or Panamanian coffee. Roast Level
In addition to selecting coffee varieties, roast level is also important to consider. The lighter the roast, the closer it is to the original fruit flavor, so the fruit acidity is heavier, and relatively, the fruit aroma is also more pronounced. The darker the roast, the heavier the bitterness and richness of the coffee. As for medium roast, the flavor naturally falls between these two. However, each coffee bean has its optimal roast level. If the coffee bean itself has lemon notes, dark roasting might overwhelm this characteristic, so it's better to ask the shopkeeper more questions when purchasing.
