Casanova Estate covers approximately 12.5 hectares, making it a micro-scale estate in Panama (even smaller than the Aurora Estate's 31 hectares mentioned in the previous issue). According to the estate owner's account, 8.5 hectares are planted with a variety of coffee varieties ranging from common Typica, Red Catuai, Pacamara to others. After 2008, small areas began planting Geisha variety coffee, which now accounts for nearly half of the total. The estate's altitude ranges from 1500 to 1675 meters. In addition to coffee cultivation areas, there are also 3.5 hectares of native forests and various fruit trees, including high-altitude cypress, pine, and eucalyptus trees, making it a typical example of a self-sufficient estate.

Casanova Estate is most widely known for winning the championship honor at the 2011 Best of Panama competition, with a cupping score as high as 92.3 points. It not only defeated the most iconic Hacienda La Esmeralda, which had won consecutive championships at that time, but the bid price also broke the highest record of that year, reaching $70.25 per pound. In the following years, it has achieved countless excellent results, continuously qualifying for the final competition batches of Best of Panama.

Finca La Valentina, owned by the Osorio family, is located in Panama, Boquete, Horqueta, with diverse terrain and humid climate. The average temperature is around 15-20 degrees Celsius. Additionally, the estate is surrounded by a forest, a slate mine, and two clear streams, making resources quite abundant and creating an excellent cultivation paradise.

This includes 5th place in the washed Geisha category in 2012, 10th place in the washed Geisha category in 2013, 12th place in the washed Geisha category in 2014, and 14th place in the washed Geisha category in 2015.

Finca La Valentina is dedicated to specialty coffee cultivation. Besides personalized care, the local unique microclimate has created outstanding high quality in their Arabica coffee beans (SHB). In 2011, the estate's Geisha ARISTAR won first place in the Panama competition. This year, 2012, the estate's Geisha ARISTAR and Valentina also achieved high scores of 87.07 and 84.66 respectively.

Through washed processing, unripe beans and defective beans are selected out due to buoyancy, and the fermentation process is easier to control. Therefore, unlike natural processed beans which may have off-flavors, washed coffee presents distinct fruit acidity, slightly stronger complexity, and cleaner cup characteristics (without any negative flavors like astringency or sharpness). However, precisely because of being too "clean," the richness of flavor is slightly weaker. The estate uses both washed and natural drying methods. Clean and sweet mountain spring water provides ideal conditions for washed processing, which creates a bright, transparent appearance and pure, fresh taste for the coffee beans. The washed coffee beans are placed on large patios to dry naturally in sunlight.

Generally speaking, freshly harvested coffee beans from the current year are called "New Crop." This distinction is mainly due to the moisture content issue of green beans. New crops have higher moisture content (usually between 11%-13%), with mostly dark green or blue-green appearance. Old crops (10%-11% moisture content) and aged crops (9%-10% moisture content) have lighter green appearance, lighter weight and texture, and lack the gloss and tactile feel of new crop surfaces. Of course, different processing methods, origins, and varieties of green beans will vary.

Flavor Description:

Rich peach wine aroma, strawberry, and passion fruit fragrance, combined with unique delicate floral notes and bergamot. Upon tasting, sweet blueberry and peach aromas dance on the tip of the tongue, with a lingering finish of floral notes and bergamot.
