Why can't I help customers grind a whole bag of coffee powder?
We know that the flavor (Flavor) of coffee beans refers to the overall sensation of coffee in the mouth.
Flavor is composed of aromatic aroma (Aroma), taste sensations (taste), and mouthfeel (mouth-feeling). As shown in the figure below:
Taste
Mainly focuses on the experience of sour, sweet, bitter, spicy, and salty. For example, we often say this coffee is rather sour, this coffee is a bit bitter... In addition, there are two other tastes that can also be perceived: umami and metallic taste.
Mouth-feeling
Mainly focuses on feeling viscosity, temperature, object size, pain, prickling sensation, touch, etc. For example, we often say: Body (Body), this one is rather full-bodied, that one is smoother...
Aroma
Things that can be smelled by our nose, usually volatile. When we describe coffee flavor, we often talk about: floral, fruity, earthy, nutty... etc.
Among these, the aroma of coffee beans, these aromatic compounds released from freshly crushed coffee cells, such as esters and aldehyde enzymes, will quickly volatilize after grinding into powder - compared to coffee beans and coffee powder, the surface area in contact with air will increase hundreds or thousands of times. Not only will aromatic substances volatilize and be lost, but oxygen in the air will also oxidize flavor components: for example, oxidizing fats will produce rancid flavors. Freshly ground coffee powder will quickly absorb moisture from the air, increasing weight and reducing the coffee's extraction rate.
Therefore, in order not to waste good coffee, please insist on drinking freshly ground coffee powder. If you have good coffee beans at home and want to save costs, you can buy a manual coffee grinder; although it's slow, this freshly ground coffee powder can better maintain the original flavor, so as not to disappoint this bag of coffee beans.
