Understanding Pour-Over Coffee
Pour-over coffee is different from the regular black coffee we usually drink. Although it brews into black coffee, its "bitterness" is not prominent. Instead, you'll taste more bright "acidity" and subtle coffee "floral" aromas!
As I continue learning about specialty coffee, I'd like to share my first experience with pour-over coffee, offering a straightforward explanation of what makes pour-over coffee different.
(After grinding coffee beans into powder, place them in a container and smell the "dry aroma" of the coffee.)
Brewing Equipment
The large machines we typically see for making fancy coffee are "espresso machines," used to brew very small but extremely concentrated espresso shots, which are then combined with other beverages to create "fancy coffee drinks."
(Fancy coffee: espresso + mixed beverages, such as "latte" = espresso + milk)
However, pour-over coffee brewing equipment is generally very simple!
- A pour-over kettle (a watering kettle with a uniquely designed spout)
- An electronic scale (for measuring coffee bean portions and brewing amounts)
- A filter cup (place a filter paper on the filter cup, add coffee grounds, and brew)
- A serving pot (placed under the filter cup to hold the delicious brewed coffee!)
Brewing Method
The pour-over coffee brewing process:
- First, weigh the required amount of coffee beans;
- Grind the beans with a grinder (to a consistency similar to sugar granules);
- Place the coffee grounds in the filter cup (which already has filter paper in it);
- Place the filter cup and serving pot on the electronic scale, ready to brew;
- Brew using a coffee-to-water ratio between 1:13 and 1:18, using hot water around 90°C from the pour-over kettle, maintaining a steady, fine stream for pouring.

During brewing, the coffee grounds in the filter cup rise higher as they're saturated with hot water, and the coffee aroma gradually dissipates. The entire room fills with wisps of elegant coffee floral fragrance (like the fresh scent of jasmine flowers - my olfactory memory isn't great, hehe!).
After brewing completes, shake the serving pot with the delicious coffee (shaking makes it taste better) to mix all the various elements, then you can directly pour and enjoy the delicious pour-over coffee!
Taste Profile
When I used to drink espresso, the coffee was also black, with a rich layer of crema on top. It was intensely bitter and aromatic, feeling mellow and smooth, with a strong coffee flavor that lingered.
After trying pour-over coffee, the difference was significant, giving me a new understanding of coffee. I tasted high-quality fruit acidity and subtle coffee floral aromas, while bitterness and astringency were minimal. The slight acidity left an elegant floral fragrance lingering in the mouth. Even after drinking a glass of warm water, the aroma didn't dissipate - the aftertaste was long-lasting.
