Grading and Quality of Roasted Coffee Beans
The screening and grading of coffee are determined by bean size and quality, as well as the number of defective beans (such as broken beans under mature beans) per pound. Each country's standards are different.
What makes specialty coffee so special? It's mainly because of the very careful and meticulous selection required during the grading process. In contrast, commercial blended coffee beans don't require such meticulous attention in planting, selection, and grading, making production cheaper but resulting in less flavor.

Selection and Blending of Roasted Coffee Beans
The main principle for selecting raw beans is based on considerations of aroma quality and cost. Although single-origin coffee products are available on the market, most instant coffees are blended. The selection of coffee beans relies on accumulated experience, understanding the characteristics and compatibility of various quality and origin raw beans, in order to create products with suitable aroma and cost control. For example, Robusta raw coffee beans from Indonesia are easily blended with raw beans from other origins.
In terms of cost control, lower-priced instant coffees generally contain more Robusta raw beans or lower-quality Brazilian beans in their blended raw beans. Those with acidity and stronger flavor are mainly based on wet-processed Arabica raw beans and higher-grade Brazilian raw beans.
The blending of raw coffee beans has other advantages besides aroma and cost considerations. Coffee bean blending can achieve long-term stable product quality, minimizing variability, which cannot be achieved using single-origin raw coffee beans. Additionally, it can avoid sudden shortages due to climate or disease affecting the source.
Good raw beans can be roasted individually and then blended, or they can be blended first and then roasted together. The choice between these two methods depends on factors such as whether the quality of the coffee beans is similar and whether the raw bean sizes are similar. Usually, blending first and then roasting is more common.
