Today, let's talk about the most popular third-wave coffees that have the longest queues.

What is Third Wave Coffee?

Third wave coffee actually places greater emphasis on the quality of the coffee itself and the brewing methods, returning everything to its origins. There's careful consideration about what coffee beans are used, which farm they come from, whether they're roasted and ground fresh on-site, and what vessels are used for brewing. To meet the increasingly high demands of modern consumers, third wave coffee shops often equip their stores with coffee bean roasters to reduce oxidation time and brew the freshest coffee possible. Meanwhile, coffee brewing vessels have returned to hand-pour methods from a century ago, bringing coffee back to its natural roots.

Innovative Brewing Methods

Additionally, third wave coffee shop owners have found ways to invent cold brew and nitro coffee. Now, nitro coffee is what you see in the image below. If you think that white layer on top is milk foam, you're completely wrong—that's actually nitrogen foam. They inject nitrogen into the coffee, and when poured into a cup, the nitrogen rises to create the effect shown in the image below. Nitrogen affects the flavor and texture of coffee, making it smoother and more aromatic, completely eliminating the need for milk as a companion.

Cold Brew Coffee

So-called cold brew coffee, as the name suggests, is coffee brewed by steeping it in cold water. Coffee brewed this way has less bitterness and acidity. Compared to hot brewed coffee that takes only a few minutes, cold brew often requires 12-18 hours and uses two to three times the amount of coffee. However, the preparation process is extremely simple, making it perfect for lazy people like me.

Equipment and Method

Equipment: Coffee beans, manual ceramic grinder, French press.

First, grind the coffee beans coarsely to the size shown in the image below. I chose a manual grinder—though it takes more effort, the coffee particles are more uniform compared to using a food processor.

Then place the appropriate amount of coffee grounds into the French press, pour in cold water, let it steep for 12-18 hours, then filter. A smooth cold brew coffee is ready. Simple, economical, delicious, and most importantly, stylish enough.

*Approximately one part coffee grounds to two parts water. You can also adjust the amount according to your taste preferences for strength or lightness.
