Brazil: The Coffee Giant

Brazil is the world's largest coffee-growing country, often referred to as the world's "giant" and "monarch." There, the land is fertile, rainfall is moderate, and the temperature is pleasant; there, grow clusters of shrubs bearing red fruits. The sunshine and rain here nourish about one-third of the world's coffee trees.

Brazilian Coffee Varieties

Brazilian coffee generally refers to coffee produced in Brazil. There are numerous varieties of Brazilian coffee, which are called "Brazils" to distinguish them from "Milds" coffees. Because most Brazilian coffee is unwashed and sun-dried, they are classified according to their producing state and shipping port. Brazil has 21 states, 17 of which produce coffee, but 4 states have the largest production, accounting for 98% of the country's total output. They are: Paraná, São Paulo, Minas Gerais, and Espírito Santo. Paraná state in the south has the most astonishing production, accounting for 50% of the total output.

Brazil Santos Coffee

Brazil Santos, exported from the port of Santos in São Paulo state, is famous, with NO.2 Screen 18-19 being the standard grade, which is the highest grade in Brazil (because NO.1 represents being completely flawless). Its flavor is mellow and neutral. It can be brewed directly or mixed with other types of coffee beans to create a blend, which is also an excellent choice.

It has relatively low acidity in its flavor profile, combined with the sweet and bitter taste of coffee, making it extremely smooth to drink, with a faint grassy fragrance. It's fragrant with a slight bitterness, sweet and smooth, with a pleasant aftertaste. The acidity and bitterness can be adjusted through roasting - medium roasting brings out gentle aromas and moderate flavors, while dark roasting produces strong bitterness, making it suitable for blending mixed coffee.

This flavor is mild and smooth, with low acidity, moderate body, and a subtle sweetness. All these gentle flavors mixed together create the best challenge for the taste buds to distinguish them one by one, which is why many Santos fans love this coffee. Precisely because of its mildness and common character, Santos coffee is suitable for medium roasting and the most popular brewing methods, making it the best ingredient for espresso and various specialty coffees.
