The First Encounter with Brazilian Santos Coffee

Brazilian Santos Coffee was the first single-origin coffee that I tasted with care at Half-Mu Pond. The scene from that afternoon remains vivid: the pond owner made a cup for himself to accompany me, so we sat at the bar counter, one inside and one outside, beginning our Brazilian Santos time.

The Layers of Flavor

At first sip, a gentle acidity gradually spreads throughout the mouth - acidic but not harsh, just softly filling your entire oral cavity. Following this comes a long, clear bitterness. You need not worry at all that Brazilian Santos's bitterness will disappoint your taste buds. On the contrary, its bitterness carries a subtle sweetness. As this bitterness slowly ripples through your mouth, your hand seems enchanted, unconsciously raising the cup to deliver a second wave of clear bitterness to your lips. The feeling it brings is like the nursery rhyme sings: "Grandma gave me a tiny olive." The initial astringency of the olive, followed by the refreshing sweetness after careful chewing, is what captivates many people. The surprise brought by Brazilian Santos's clear bitterness can rival that of the olive.

As you slowly swallow it, only then does the third layer of flavor emerge: fragrant lips and teeth, saliva flowing from the tongue. In fact, as long as you are not someone with dull taste perception, by the second sip, you can already feel its charm. With the mouth conditioned by the first sip of Brazilian Santos, a delicate aroma has already been left in your oral cavity. Taking another sip, the flavors in your mouth become exquisite, because you can simultaneously feel the continuous subtle acidity, taste the silent clear bitterness, and the moistening threads of sweetness, while your tongue is still enveloped by the mellow aroma... Therefore, those who drink coffee are happy, but those who truly understand how to drink coffee are even happier.

The Changing Cup and Aftertaste

Immersed in the slow time brought by coffee, the cup in my hand has quietly changed. As heat is gradually drawn away by the air, Santos's clear bitterness also gradually fades. Another sip, and the full mellow aroma will dominate your taste buds, as if bitterness has given way to sweetness. Reluctantly, I bid farewell to the last sip of coffee. At this moment, having half a cup of plain water is the most wonderful experience. We often use "plain water" to describe something bland, but this is definitely not the "plain water" after drinking single-origin coffee. The plain water after drinking Santos seems to have been touched by a magic wand, endowed with sweet and refreshing properties.

Reflections on Coffee and Tea

Two years ago, I obtained some high-quality Taiwan black tea and Alishan tea, for which I also acquired a tea set. With a sense of reverence, I earnestly "tasted" tea for two years. Although calling it "tasting" tea is truly a bit like showing off a meager skill before an expert, I still found great joy in brewing and drinking tea each time. Even now, my heart is still enveloped by the faint tea aroma.

Whether it's tea or coffee, both can bring inner peace and joy to people. Only those truly willing to calm down are willing to savor them carefully. May you and I both find tranquility, mindfully spend our own slow time, and earnestly experience the slowness of horse-drawn carriages in the past.
