In 1494, when Columbus first landed on the island of Jamaica, he wrote in his nautical diary, "This is a clear and beautiful green island, with towering mountains reaching to the sky—it is truly a sight that never ceases to captivate."

The island of Jamaica is surrounded by the Caribbean Sea. On clear days, brilliant sunlight shines upon the sea surface, and the distant mountains are enveloped in a faint, ethereal blue ambiance due to the refraction of the azure seawater, appearing misty and ethereal, imbued with a sense of mystery.

The Blue Mountain Range earned its beautiful name because when British soldiers first arrived in Jamaica and saw the peaks enveloped in blue light, they exclaimed, "Look, blue mountains!" Thus, they were named the Blue Mountains.

The World's Only Flawless Coffee

Jamaican Blue Mountain coffee is one of the finest coffees in the world, renowned for its exceptional quality and excellent taste. Its special value and precious nature stem from the unique natural environment of Jamaica's Blue Mountains.

The Blue Mountain Range is located in eastern Jamaica, where the climate is humid, with fog and rain throughout the year. Such climatic conditions have created the world-renowned Jamaican Blue Mountain coffee—balanced in acidity, bitterness, sweetness, and body, with a unique and intense fruity aroma and a fragrant aftertaste that leaves one wanting more. It is considered by the world coffee organization as "the only flawless coffee in the world."

The Blue Mountain region, situated atop high mountains with rugged and uneven terrain, presents enormous difficulties for planting and harvesting. Therefore, the coffee pickers are almost exclusively local skilled female workers. The timing of coffee harvesting must be precise; both unripe and overripe fruits can affect the coffee quality. After picking, the coffee cherries must be hulled the same day, then fermented for 12-18 hours.

Following this, the coffee beans undergo washing and selection. The subsequent process is drying, which must be conducted on concrete floors or thick blankets until the moisture content of the coffee beans drops to 12%-14%. They are then stored in dedicated warehouses. These procedures must be strictly controlled; otherwise, the coffee quality will be affected.

Strict Certification Standards

In 1950, the Jamaican government established the Jamaican Coffee Industry Board, which sets quality standards for Jamaican coffee and supervises their implementation to ensure the quality of Jamaican Blue Mountain coffee. The board grants special official seals to both raw and roasted coffee exported from Jamaica, making it the highest-level national coffee institution in the world.

Coffee from the Jamaican Blue Mountain region has three grades: Blue Mountain Coffee, High Mountain Coffee, and Jamaica Coffee. Among these, Blue Mountain Coffee and High Mountain Coffee are each further divided into two grades.

From highest to lowest quality, they are: Blue Mountain No. 1, Blue Mountain No. 2, High Mountain No. 1, High Mountain No. 2, and Jamaica Coffee. Typically, only coffee grown between altitudes of 457 to 1524 meters can be called Blue Mountain Coffee.

The quality control for Jamaican Blue Mountain is extremely strict, with certification work conducted by the government's "Coffee Industry Board." The largest Blue Mountain coffee estate today is Mavis Bank, whose wooden barrels are imprinted with M.B.C.F., known as the paradise of Jamaican Blue Mountain coffee.

Jamaican Coffee Brewing Recommendations

Daily brewing filter cup choices: V60, Kalita wave, and KONO are all suitable.

KONO parameters: 15g coffee grounds, water temperature 89°C, grind level 4, water-to-coffee ratio close to 1:15, total time around 2:00.

Technique: Bloom with 25-30g of water for 30s; first pour to 120g then stop. Use vertical water flow, small water flow with slow circular motion. Second pour to 225g, with slightly faster water flow and circular speed to reduce fine particles clogging the filter, which could lead to over-extraction.

Other Extraction Recommendations:

French Press: Grind level 3.5-4, water temperature 90°C

Siphon: Grind level 4, water temperature 89°C

AeroPress: Grind level 2.5, water temperature 88°C
