The Origin of Ethiopian Coffee Beans
Ethiopia is the birthplace of coffee: Arabica coffee grows in the forests of the Kaffa region. We believe that Ethiopian coffee possesses some of the world's finest quality, and the excellent genetic diversity of coffee bushes is one of the reasons for this superior quality.
Arabica coffee was also discovered early in the Harar region, where it should have been brought from either the Kaffa region or from areas near the Sudan border. At that time, slave laborers picked coffee cherries from the forests, chewed them, and then spat out the seeds, thus spreading them to the Harar region. This route was also part of the Arab slave trade route at the time.
In Ethiopia, most coffee is processed using the washed method; therefore, it has bright, clean flavors with fruity and floral notes. Additionally, some coffee is processed using the natural dry method, which preserves the integrity of the fruit skin and can produce a very different pastoral fruit flavor with unique body.
There are significant differences in coffee taste produced through the natural dry method versus the washed method. Washed Sidamo, Yirga Cheffe, and Limmu coffees are brighter and have milder earthy aromas compared to natural processed coffees of the same variety.
Essentially, coffee is a natural agricultural product. When we discover an exceptionally high-quality coffee (such as naturally processed coffee from the southern regions), it's like tasting Michigan peaches at the peak of their season—sweet, juicy, rich in fruit flavor, and full of ripe character.
However, once that batch of coffee is consumed, this particular flavor profile disappears. Only when all natural factors are perfectly aligned can we harvest coffee with the same flavor profile, and such opportunities are rare and cannot be forced.
Different batches of Ethiopian coffee beans can vary significantly. Extensive cupping is required to identify coffees that stand out among their peers.
When we find the most suitable coffee, we immediately purchase most of that year's product, leaving only a small gap to prevent the possibility of other high-quality batches appearing later in the season.
For naturally processed Ethiopian coffee, we purchase in large quantities from the beginning of the season. Because for this type of coffee, the early-stage coffees are often the best.
