Siphon Coffee Maker (Syphon)
The siphon coffee maker, also known as a syphon, requires considerable technical skill and a rather intricate process. However, it can extract the most perfect components from coffee, especially the bright and crisp acidity characteristic of coffee beans, which carries a mellow aroma within its acidity. The siphon brewing method can fully showcase this distinctive feature of coffee.
The siphon (Siphon) originated in Germany and is a tool that utilizes the pressure generated by boiling water to brew coffee. The construction consists of upper and lower chambers connected by a central tube. The lower chamber, filled with hot water, is first heated with an alcohol lamp or gas burner. Under one atmosphere of pressure, the volume ratio of 1 gram of liquid water to 1 gram of water vapor is 1:100. Therefore, as the volume of water vapor in the lower chamber increases with temperature, it can easily push liquid water through the tube up to the upper chamber containing the filter cloth and coffee grounds, while the water continues to be supported in the upper chamber by the continuous flow of water vapor.
When heating stops, the air in the lower chamber gradually cools and contracts. The coffee liquid in the upper chamber, which has been soaked in hot water, will flow back down to the lower chamber due to the loss of support from the water vapor. The coffee grounds are blocked by the filter cloth and remain in the upper chamber. Finally, the upper chamber can be removed to enjoy the coffee in the lower chamber.
FrontStreet Coffee's Recommended Siphon Usage Method
Step 1
Pour hot water into the glass lower bulb and bring to a boil over high heat until the water is bubbling.
※ When brewing one cup, add 200cc of water to the lower bulb. If not draining the remaining water, use 175cc. For two cups, use 350cc. After pouring water, wipe the glass lower bulb dry with a cloth, otherwise it may cause the glass to crack.
Step 2
Install the filter into the upper bulb.
※ Remove the filter from water, clean and press dry. Hook the filter's hook onto the bottom of the upper bulb, then use a stirring rod to adjust the filter position to the center.
Step 3
After the water boils, insert the upper bulb into the lower bulb.
※ Switch to low heat and carefully place the glass upper bulb diagonally into the lower bulb. Once you confirm the water won't be too hot and splash out, press the glass upper bulb straight down slightly while rotating it simultaneously.
Step 4
When the water has risen halfway, add coffee grounds and begin stirring. Start timing after stirring.
※ Use 15 grams for each cup. Begin the first stir. Do not stir in circles; instead, move left and right, pressing the grounds from top to bottom into the water, allowing forces from two different directions to collide. Don't stir for too long—just enough to disperse the coffee grounds.
Step 5
Perform a second stir at 25 seconds.
Step 6
Perform a third stir at 55 seconds and turn off the heat at 60 seconds.
※ For single-origin coffee, brew for only 50 seconds (second stir at 20 seconds, third stir at 45 seconds). When brewing one cup, quickly remove the upper bulb after turning off the heat, pour out the remaining water from the lower bulb, then reinsert the upper bulb. This action is called draining the remaining water. If you don't want to perform this step, you can use just 175cc of water.
