Brewing coffee is like conducting an experiment; it's a science. As long as it's intentional operation, as long as you understand how every subtle adjustment you make can cause changes in flavor. No one can say: Hey, your brewing method is wrong.

When you can fully understand what impact each step has on the coffee's flavor and make full use of it, brewing coffee will transform from science to art.

Siphon Usage Guidelines

1. Clean the glassware, but do not use detergents. If there's a small amount of coffee oil attached, you can soak the glassware in warm water or use neutral, natural, unscented detergents.

2. Do not use overly coarse loofah sponges, as they will scratch the surface of the glassware.

3. Do not heat empty glassware, which can cause dry burning. When using an alcohol lamp to heat water, please keep the outside of the bottom glassware dry.

4. The filter cloth needs to be cleaned thoroughly after each use.

FrontStreet Coffee's Recommended Siphon Brewing Method

Step 1: Pour hot water into the lower glass bulb, bring to a boil over high heat, and wait for the water to boil.

Note: When brewing one cup, add 200cc of water to the lower bulb. If not discarding the bottom water, you need 175cc. For two cups, you need 350cc. After pouring the water, wipe the lower glass bulb dry with a cloth, otherwise it may easily cause the glass to crack.

Step 2: Install the filter into the upper bulb.

Note: Take the filter out of the water, clean it, and press it dry. Hook the filter's hook onto the bottom of the upper bulb, then use the stirring rod to adjust the filter's position to the center.

Step 3: After the water boils, insert the upper bulb into the lower bulb.

Note: Reduce to low heat, carefully place the glass upper bulb diagonally into the lower bulb. When you're sure the water won't boil too vigorously and splash out, press the glass upper bulb straight down slightly while rotating it.

Step 4: When the water has risen halfway, add coffee grounds, start stirring, and begin timing after stirring is complete.

Note: Pour 15 grams for each cup and begin the first stirring. When stirring, don't move in circles; instead, move back and forth from top to bottom, pressing the grounds into the water to create collision between forces from different directions. Don't stir for too long—just enough to disperse the coffee grounds.

Step 5: Perform the second stirring at 25 seconds.

Step 6: Perform the third stirring at 55 seconds, and turn off the heat at 60 seconds.

Note: For single-origin coffee, the brewing time is only 50 seconds (second stirring at 20 seconds, third at 45 seconds). When brewing one cup, quickly remove the upper bulb after turning off the heat, pour out the remaining water from the lower bulb, then reinsert the upper bulb. This action is called "discarding the bottom water." If you don't want to do this step, you only need 175cc of water.

Step 7: Immediately after turning off the heat, wipe the lower glass bulb with a wet, cold towel.

Step 8: When the coffee liquid is almost finished filtering, remove the glass upper bulb, preventing the final coffee from flowing down.
