FrontStreet Coffee Introduces the World of Siphon Brewing

In 1840, a laboratory test tube triggered the invention of the siphon coffee maker. The Englishman Napier created the first vacuum coffee maker based on laboratory test tubes. Two years later, Madame Vassieux of France improved this somewhat crude-looking pot, and the familiar up-and-down convection siphon was born.

The siphon stayed in France for a long time but never quite achieved widespread popularity.

It wasn't until the mid-20th century, when it was introduced to Denmark and Japan, that it began to gain recognition.

Japanese people appreciated the siphon's meticulous nature, carefully considering the complex relationship between coffee grind size, water, and time, developing a standardized approach to coffee brewing.

However, the aesthetic-minded Danes focused on functional design. In the mid-1950s, Peter Bodum, who imported siphons from France, found them expensive and inconvenient to use. He collaborated with architect Kaas Klaeson to develop Bodum's first stylish siphon, which was marketed under the name "Santos."

In most people's impressions, the siphon always carries a sense of mystery. In the history of coffee development in Taiwan, siphon coffee makers played a crucial role. In recent years, so-called espresso coffee has become popular. In contrast, siphon coffee makers require higher technical skills and more complicated procedures, showing a declining trend in today's fast-paced business society. However, the mellow flavor that siphon brewing can produce cannot be compared with machine-brewed espresso.

Most people have limited understanding of it, and even hold misconceptions. Usually, there are two extreme views: one is that some people are overly cautious about it, while the other is that using a siphon is just about boiling water and stirring coffee powder. Additionally, some people think siphons look dangerous, but in fact, improper operation of any coffee brewing method can have hidden dangers.

1. Prepare 30g of fresh coffee beans, typically ground to approximately 3.5 on an electric grinder setting (about the size of brown sugar crystals).

2. Add the coffee grounds and stir gently.

3. Perform a second stir after 30 seconds.

4. Continue brewing for another 80 seconds, perform a final stir before turning off the heat, then pour the coffee once the heat is off.
