What are the flavor and profile of Topazio variety coffee from Brazil's Barinas Coffee Farm? How to brew Brazilian coffee beans?

As a pioneer in the Cerrado region, Barinas Farm and its family history can be traced back to 1820, when Mrs. Thereza Tomasia and her family arrived in Araxá. Currently led by Márcio Borges de Castro Alves, Barinas Farm has been passed down through seven generations and has continued Alberto Castro Alves's vision since beginning coffee cultivation in 1950. The history of Barinas Farm and the Alves family that owns it spans seven generations to the 19th century, now led by Márcio Borges de Castro Alves and his son Tiago. Barinas Farm is located in the town of Araxá, Minas Gerais. They have a state-of-the-art laboratory with the latest equipment and a highly qualified team. The farm has received multiple awards and was recognized in 2016 as a finalist for "Sustainable Farm" in the famous television program Globo Rural.

Edson Hiroaki Tamekuni and his two brothers manage the Vargem Grande farm, which they purchased in 2016. The brothers together have shared several cooperative awards for their hard work on the farm, including first place in a coffee competition in 2017. Vargem Grande Farm is located in Campos Altos, Minas Gerais, covering 100 hectares primarily dedicated to coffee cultivation.

This natural variety grows at high altitudes above 1100 meters at the Alto Paranaíba Experimental Station (COOPADAP) in Minas Gerais. The Cooperative headquarters is located in São Gotardo town, where these facilities are used to assist members in producing high-quality coffee. They provide research, new technologies, safety consulting, and agricultural information. The 22-hectare land is closely supervised using state-of-the-art technology to improve coffee quality. In addition to coffee, COOPADAP also produces avocados.

Barinas Farm is renowned domestically and internationally for its high-quality coffee beans with refined aroma and flavor. Barinas Farm represents the original flavor profile of sweet Cerrado region coffee.

Now, in the seventh generation of producers, the history of Barinas Farm and its descendant family can be traced back to the 19th century. Barinas shows great care for its employees, providing them with breakfast, lunch, and dinner. They have health and dental plans, and they receive professional health advice regarding hygiene and safety issues. Barinas participates in community social actions, collaborating with the city's main hospital's drug rehabilitation center, where they provide work materials and coffee, and plant seedlings of native species in protected areas.

Brewing Method: Water-to-coffee ratio 1:15, 15g coffee grounds. First pour 25g water for 25s pre-infusion. Second pour to 120g water, then pause. Wait until the water level in the coffee bed drops to half, then continue pouring slowly to 225g total. Extraction time around 2:00.

Analysis: Using a three-stage brewing method to clearly define the front, middle, and back-end flavors of the coffee. Because V60 has many ribs and drains quickly, pausing the pour can help extend the extraction time.
