Q1: Why small-batch roasting? What problems arise with large-batch roasting?

A1: You may not be aware that the optimal flavor window for roasted coffee beans is only one month. After three months, coffee beans can become moldy, rancid, and potentially produce mycotoxins.

Only true small-batch roasting—roasting only after orders are placed—can ensure consumers receive genuinely fresh coffee. Consider this: a roaster handling over ten pounds at once produces large quantities of beans, such as Panama Geisha. How can such volume be sold within days? Only small-scale, refined roasting allows you to truly experience perfect coffee flavors.

Q2: Can you really roast fresh for just one pound?

If a professional roaster works eight hours non-stop, roasting 16 batches of coffee beans daily with a daily wage of 3,000 yuan, the labor cost for just one pound of coffee would be around 375 yuan. If this were truly the case, costs would be unsustainable. HOWEVER! Our shop roasts in half-pound batches, with our roaster continuously on-site. Each coffee variety undergoes curve adjustments by our roaster, with data stored in our computer system. Combined with computerized stability controls, we achieve true professional roasting standards. While loading and unloading beans still requires traditional manual labor, we effectively control costs, allowing customers to truly enjoy professional coffee roasting.

Q4: Can you really achieve 17 levels of flavor fine-tuning? How does customized roasting work?

A4: Actually, we could achieve 34 levels if needed. Through practical cupping analysis, we've found that approximately 2°C temperature differences are sufficient to alter coffee bean flavors. The main flavor characteristics are determined between 185-220°C. We established 17 levels, with each level representing approximately 2°C intervals—the minimum difference detectable by consumers. We must emphasize that different beans require different roasting curves to delicately express various coffee flavors. The 17 levels are simply graded from 1-9, with 0.5 as each interval, where level 5 represents medium roast. This provides an easy way for consumers to customize roasting and fine-tune flavors.

Q5: How is the default roasting level defined? Is it the best-tasting roast level?

A5: For each coffee variety, the default roasting level is determined through a process: our roaster first conducts an initial test roast after receiving the raw beans, then performs cupping, adjusts the roast, cups again, and repeats this cycle until the final curve and default roasting point are established. Frankly, our beans receive excellent reviews not because we're extraordinary, but because we work diligently at adjustments. Thanks to our one-pound fresh-roast model, each bean variety undergoes at least two fine-tuning sessions before listing, which is how FrontStreet Coffee can present coffee flavors at a higher quality level. Consider this: can the first batch from a five-kilogram roaster really taste perfect? I believe that's impossible—what you'd be drinking would likely be the first "guinea pig" batch.
