Coffee Roasting Basics
Coffee roasters explore the temperature changes of freshly roasted coffee beans during the roasting process to define names related to roasting levels, such as city roast and French roast. They often follow specific patterns or roasting curves to highlight certain flavor characteristics. How should roasting programs be designed optimally? Many factors are involved, such as coffee origin, variety, processing method, or desired flavor profile. A roasting profile can be presented as a graph including time and temperature, or manually recorded, or utilize computers to record data and temperature collected from various points of the roaster.
Determining Roast Level
The most popular, and possibly most accurate method for determining roast level is to judge the color of the beans with the eyes (of course, there are also methods using colorimeters). As coffee beans gradually absorb heat, their color turns yellow, then becomes increasingly deep brown. In the later stages of roasting, the surface of the beans will develop oils, and the roast level will further deepen until it is discharged. Additionally, beans will also darken as storage time increases. Most roasters use comprehensive data (bean quality, temperature, smell, color, sound, etc.) to monitor the roasting process.
Sound Indicators in Roasting
Sound is an excellent indicator for measuring changes in coffee beans during the roasting process. Roasters refer to two temperature-related thresholds called cracks. At approximately 200 degrees Celsius, beans will make cracking sounds, like popcorn. This moment is called first crack, marking the beginning of light roast. When coffee beans reach approximately 224 degrees Celsius, they emit a second round of cracking sounds, and this moment is called second crack. During the progression of first and second cracks, the internal pressure of coffee beans increases, internal tissue structure fractures, and hot air is rapidly released, thus producing cracking sounds.
