Hand Net Roasting Method

What is a hand net?

You can use a household flour sieve!

  1. Place coffee beans in the hand net;
  2. Place the hand net on a gas stove to heat;
  3. Continuously stir the coffee beans while roasting;
  4. Finally, place it on a fan to cool down.

Continuously stirring the beans during roasting ensures even heat distribution for the coffee beans.

There are many cooling methods, but the purpose is to cool the coffee beans to prevent continued heating and increased roast level.

Oven Roasting Method

  1. Preheat the oven to 220°C, spread raw beans evenly on the baking sheet;
  2. After about 15 minutes, you'll hear cracking sounds, stir every few minutes;
  3. When the desired color is achieved, immediately remove from the oven for cooling.

Coffee beans must be spread evenly on the baking sheet (preferably using a tray with grooves). The cracking sound indicates that the beans are being roasted, darkening, and moisture is evaporating from the coffee beans.

However, using an oven to roast coffee beans makes it difficult to observe color changes immediately. Additionally, most oven roasting methods spread beans flat on the baking sheet, which prevents even heating on the other side. Although you can take them out to stir during the process, the temperature will drop during this time.

Wok Roasting Method

There are two methods for wok roasting - continuous stirring with a spatula and roasting without stirring. Here, we'll focus on the method without stirring.

  1. Place raw coffee beans in the wok and cover with the lid;
  2. Turn on the heat to medium-low;
  3. For the first 3 minutes, stir once per minute. After 3 minutes, when the beans change color, switch to medium heat and stir every 20 seconds;
  4. When you hear cracking sounds from the coffee beans, remove the lid, increase heat to medium-high, and stir every 10 seconds;
  5. At this point, the beans are lightly roasted. If you want a darker roast, continue stirring until you achieve the desired color.

The method for roasting coffee beans with a spatula is as follows:

Heat the wok to about 220°C, add coffee beans, and stir continuously. When the beans reach your desired color, place them on a fan to cool.

When using a wok to roast coffee beans, ensure it's thoroughly clean if you don't want your coffee beans to absorb other flavors.

The heat retention of a wok is not very good, resulting in uneven roasting. After the first crack, remember to reduce the heat, as excessive temperature can easily scorch the coffee beans.

This machine uses hot air that passes through coffee beans to heat them. This type of roaster can roast coffee beans very evenly.

Different Coffee Beans and Suitable Roast Levels

Approximately 10 minutes into roasting (depending on different roasting equipment), you'll hear cracking sounds, known as the first crack. At this point, coffee beans are at a light roast level with more noticeable acidity.

About 5 minutes after the first crack, you'll hear cracking sounds again, known as the second crack. At this time, more smoke will be produced. The coffee beans are now approaching a dark roast level with more prominent burnt flavors and bitterness.

Everyone must be patient and careful, otherwise, if the heat is too strong, your beans will burn. Also remember to stir them frequently, otherwise, it will lead to uneven roasting levels.

Watching these greenish beans slowly turn yellow-brown, continuously expanding, breaking through the outer silver skin, and finally turning into the color you want - don't you feel a great sense of accomplishment?

Important Notes:

  1. Heat sources can vary - they don't have to be gas stoves; electric stoves, etc., can work, but they must allow temperature adjustment.
  2. When roasting, remember to turn on the exhaust fan or roast outdoors, otherwise the smoke and burnt smells will linger.
  3. When coffee beans are removed from the heat source at your desired temperature, the beans themselves are still very hot. At this time, you must use a fan or other methods to cool them to prevent the bean temperature from continuing to rise and increasing the roast level.
  4. Basically, when the temperature reaches around 200°C, it's a light roast; around 215°C, it's a medium roast; when it exceeds 230°C and the coffee beans start to release oil, it's already a dark roast.
