Home Coffee Bean Oven Method

This might be the simplest method. You only need a flat perforated baking tray for toast or pizza, and a reliable conventional oven with precise temperature control. If you don't have a perforated tray, you can drill a few small holes in a regular square baking tray as a substitute. The purpose of this is to spread the beans evenly across the tray so they can heat uniformly and successfully complete the six roasting stages.

Equipment needed: Conventional oven, perforated baking tray, two colanders, and a pair of heat-resistant gloves.

Advantages: Tools are readily available, can be done anytime; (hopefully) you already know how to operate the oven, and you can freely adjust the heat.

Disadvantages: Oven performance is inconsistent, and uneven roasting is almost inevitable (whether this is good or bad depends on personal taste).

Flavor profile: Due to the unpredictable nature of success or failure, this method isn't suitable for top-grade coffee beans that require careful attention. It's suitable for simple dark roasts, ideal for French press or pour-over, or espresso.

Home Coffee Bean Pan Method

This is the old-school approach. Place the beans in a lightweight pan, cover with a lid or aluminum foil. Then comes the exciting part: continuously shake the pan over the stove flame without removing it from the heat; toss the beans while listening for the first and second crack sounds. Alternatively, you can use a wok or even a heavy cast-iron skillet, constantly stirring with a wooden spatula.

You should use a thermometer during the process to record the temperature at all times. While pan-roasting beans is more laborious than using an oven, with skill, the quality of the roasted beans can be more ideal. If you happen to be in the forest with only a fire source, a pan, and a small amount of raw beans (or a small can of aged international brand coffee beans), this method comes in handy.

Equipment needed: Long-handled pan, wok or cast-iron skillet, wooden spatula (as needed), thermometer, lid, and strong biceps.

Advantages: Tools are easily accessible, you can control the bean color changes at any time; you'll look rugged and individualistic, full of charm.

Disadvantages: Beans are quite prone to scorching, requiring extensive practice to achieve truly ideal quality.

Flavor profile: Many people go through great pains to finally roast quality specialty coffee beans in a pan, so unless you've mastered the technique, don't expect immediate success. Suitable for dark roasts, not for light and delicate single-origin coffee beans.
