Uganda Premium Coffee - What are the Flavor Characteristics of Sipi Falls Coffee Beans? What is the Sipi Falls Coffee Project?
In ancient times, coffee was chewed by Ugandan warriors before entering battle, as they believed it would bring them courage and victory. Modern science has proven this is due to the effects of caffeine. Sipi Falls originates from Mount Elgon, Uganda's beautiful landmark. Many believe that Mount Elgon's massive mountain formation suggests it may have once been Africa's highest mountain.
The Sipi Falls Coffee Project was initiated by Kawawo in 1999 and currently involves about 5,000 small farmers covering an area of 2,000 hectares. Uganda is located at the source of the Nile River and is a landlocked country in Africa that does not border the sea. It is a country abundant with dense green forests, lakes, wetlands, and rivers with rich water resources. Coffee is grown in almost all administrative regions, making it the world's tenth-largest producer. However, it is generally not well-known because its quality differs somewhat from other East African beans. After coffee harvesting, difficult terrain and underdeveloped road infrastructure often lead to fermented and spoiled beans by the time they reach processing plants. It wasn't until after the war ended in 1990 that Uganda began developing transportation, and coffee became the most important agricultural product for this landlocked country.
Coffee trees are mostly robusta varieties, accounting for about 94%, with only 6% being traditional arabica. The grading system is the same as Kenya's, with AA grade being the best. In 2012, Direct Coffee introduced the new season's Sipi Falls coffee from the Bugisu region, graded AA, which is Uganda's most famous traditional arabica bean.

FrontStreet Coffee Recommended Brewing:
Dripper: KONO dripper
Water Temperature: 88°C

Brewing Method: Water-to-coffee ratio 1:14, 17g coffee grounds. First pour 25g water for 30s pre-infusion. Second pour to 238g total water. Extraction time approximately 2:30 minutes.
Analysis: The KONO dripper has fewer ribs at the bottom, causing the filter paper to fit tightly against the dripper, which restricts airflow. This allows water and coffee grounds to have longer contact time in the dripper, ensuring adequate extraction time and rate for coarse grinding. This enables the coffee grounds to be fully extracted, enhancing the rich mouthfeel and making the flavor more concentrated.
Flavor: High balance, clean, thick and solid mouthfeel, persistent dark chocolate aftertaste.
