Coffee Bean Cookies

Ingredients
• Low-gluten flour - 105g
• Butter - 45g
• Powdered sugar - 30g
• Coffee powder - 13g
• Cocoa powder - 5g
• Whole egg - 25g
Instructions
1. Soften butter at room temperature, then place in a bowl and mix thoroughly.
2. Add powdered sugar and stir consistently in one direction with a hand whisk.
3. Add whole egg and continue mixing thoroughly.
4. Mix low-gluten flour, cocoa powder, and coffee powder evenly, then sift together into the mixed butter.
5. Fold the mixture evenly with a spatula.
6. Divide the dough into 3g portions. Take one portion and shape it into a small oval ball. Use a scraper to press a relatively deep groove in the middle of the ball.
7. Arrange all the cookies on a baking tray lined with parchment paper.
8. Preheat oven to 170°C, middle rack, bake for 20 minutes.

Helpful Tips
✔ If you don't have cocoa powder, you can substitute with an equal amount of low-gluten flour.
✔ Use pure coffee powder, not 3-in-1 instant coffee mixes.
✔ Mix the low-gluten flour, coffee powder, and cocoa powder thoroughly before sifting together, otherwise the dough color will be uneven.
✔ Don't press the groove too deep with the scraper, otherwise the final product may break easily (you can also use the back of a thin knife). Also, make sure to find the exact center when pressing the groove, otherwise the final product will look unattractive.
