Introduction to Civet Coffee
In the civet cat's digestive system, only the fruit pulp on the outer surface is digested. The extremely hard coffee beans are then excreted unchanged by the civet cat's digestive system.
This digestive process creates unparalleled magical changes in the coffee beans, resulting in unique flavors, particularly fragrant and mellow taste, and a rich, rounded sweetness that cannot be compared with other coffee beans.
This is because the civet cat's digestive system breaks down the proteins in the coffee beans, reducing the bitterness caused by proteins while increasing the rounded texture of these coffee beans. Because wild civet cats are obviously better at selecting good coffee fruits, this coffee has extraordinary characteristics.
Coffee Origin
Kopi Luwak coffee is produced in Indonesia and is one of the world's most expensive coffees. Indonesia grows large amounts of coffee crops. There is a wild animal called the civet cat, an omnivore with a pointed mouth and dark gray fur. Its favorite food is fresh coffee beans, which undergo fermentation and digestion in its body, eventually being excreted as cat feces.
The feces are coffee beans one by one, also becoming the world's most expensive feces. Due to their extremely scarce quantity, they are very expensive. Civet cats are distributed in the Indochinese Peninsula, India (northeast), Bangladesh, Bhutan, Sikkim, Nepal, and the Kashmir region, but only the Bali and Sumatran civet cats, i.e., Indonesian civet cats, can produce Kopi Luwak coffee.
After processing and roasting, Kopi Luwak becomes a luxurious coffee beverage, spreading to luxury kingdoms around the world. Local coffee farmers, in pursuit of high profits, capture wild civet cats and raise them at home to produce more Kopi Luwak coffee. However, Kopi Luwak produced by farmed civet cats is correspondingly inferior in color and taste. Even so, the production of this coffee remains extremely scarce and not affordable for all coffee lovers.
This coffee comes from the excrement of an animal called the civet cat (this animal is commonly known as the civet cat in Indonesia). Although it comes from stinky poop, one sip reveals a mouthful of sweetness and fragrance, along with an indescribable sweet taste.
These wild civet cats like to eat plump, juicy coffee fruits, but the hard fruit cores (raw beans) cannot be digested and are excreted with the feces. After cleaning, they become Kopi Luwak coffee raw beans! Therefore, many people call it "cat poop" coffee.
Indonesians discovered that coffee beans fermented in the civet cat's stomach are particularly thick and fragrant, so they collect the civet cat's excrement, filter out the coffee beans, and brew them for drinking. Due to scarce production and a unique fermentation process, the flavor is quite different from ordinary coffee.
Traditionally, coffee fruits are processed through water washing or sun drying to remove the skin, pulp, and parchment layer, finally extracting the coffee beans. However, Luwak uses the civet cat's natural fermentation method to extract the coffee beans, thus having a special flavor.
It is said that early Indonesian coffee farmers regarded civet cats that specialized in eating ripe coffee fruits as enemies, but at some point, someone thought of picking coffee beans from civet cat feces to make uniquely flavored coffee. Coffee experts from various places tried it and praised it endlessly. Since then, local farmers spend a lot of time in the forest collecting civet cat feces every day during the coffee ripening season.
