Freshly ground coffee means exactly what it says: you grind the beans at the moment you want to drink them, grinding only as much as you need so that every cup is fresh.

By regional tradition, freshly ground coffee falls into two broad categories.

1. Espresso

The process runs: choose the beans — roast — blend — grind — extract on the machine.

Espresso originated in Italy. Faced with a shortage of coffee beans and no guarantee of import quality, but still determined to drink good coffee, Italians invented espresso. Making it requires an espresso machine working under pressure. The cup is intensely bitter yet leaves a sweet aftertaste, and it refreshes wonderfully. Depending on taste, milk is added: whole milk is steamed and poured into the espresso in a set ratio to create patterns, which is what we call latte art. The surface of an espresso carries a thick layer of oil known as crema—the richer the crema, the fresher the beans.

2. American Coffee

The process runs: choose the beans — roast — grind — brew or boil.

This style originated in the United States. Americans lead a fast-paced life; they found espresso too complicated to make and were unwilling to spend much time on it, and they wanted to drink coffee anywhere, anytime. So American coffee was born. It needs no expensive machine. In Europe, though, ordering an American coffee can draw a look of disdain, because Europeans consider it too light and too thin—sometimes calling it sock-washing water.

Brew it on a V60 with 15g of coffee, a 1:15 ratio, water at 90-91°C, and a grind around EK43s setting 10—fine-sugar coarseness, or roughly 80% passing a screen #20. Bloom with 30g of water for 30 seconds, pour to about 125g within a minute, then to roughly 225g by 1:35, and let it finish draining between 2:00 and 2:10.
