Before you start working with blended coffee beans, you must understand the three main characteristics of coffee beans from around the world: acidity, body, and aroma.

We will first position the flavor profile of the coffee beans we plan to blend, determining the desired acidity, body, and aroma. Then we'll search for suitable coffee beans worldwide and test them in different proportions. This also involves roasting the green coffee beans - different roasting times will produce very different flavors, and you must also consider whether to blend before roasting or after roasting.
Once all these conditions are properly addressed, a blended coffee is complete.
Experience with Pour-Over Blended Coffee Beans
When blending beans, you must first select a base flavor according to your purpose, then choose one or two additional beans to balance and enrich the flavor profile. The beans used for the base flavor should account for more than 50% of the blend. Depending on different objectives, there are two different approaches to blending beans. However, a common principle is to maintain the balance between acidity and sweetness, or between bitterness and sweetness, avoiding sharp acidity or burnt bitterness.
Soften overly prominent flavors. Choose relatively mild and light beans as the base flavor, using beans with prominent flavors for pairing. This can make the prominent flavors more gentle and allow you to taste more detailed layers.
Increase flavor complexity. You can choose two beans with significantly different flavor characteristics to blend, or use beans of the same origin with different roast levels for pairing.
Regarding whether to blend green beans or roasted beans, I personally prefer blending roasted beans. Different green beans vary greatly in size and moisture content, making blended roasting extremely difficult.
