However, compared to espresso (Italian-style espresso), this siphon coffee maker requires higher technical skill and more complicated procedures. When using a siphon coffee maker to brew coffee, pay attention to several factors: water quantity, water quality, heat control, coffee powder amount and grind size, stirring, and time. These will be explained one by one below.
Step-by-Step Siphon Coffee Brewing Guide
Step 1: Add Hot Water to the Lower Glass Chamber
If you're using a 3-cup pot, the minimum water amount should be for 2 cups, because not all water will be drawn upward. If you only use water for 1 cup (when brewing just one serving), the amount drawn upward will only be 70-80% of the chamber!
※ If using a TCA-3, the recommended minimum water amount is 240cc (2 cups). After pouring water, wipe the lower glass chamber dry with a cloth, otherwise it may cause the glass to crack.
Step 2: Place the Filter in the Upper Chamber
The filter should already be installed at this point!
※ After taking the filter out of water, clean it and press dry. Hook the filter's clip to the bottom of the upper chamber, then use the stirring rod to adjust the filter position to the center.
Step 3: Heat with High Heat Until Water Boils
※ After boiling, reduce to low heat
Step 4: Monitor Water Rising
When water rises halfway, before pouring coffee powder (grind size 3-4), pay attention that the water movement in the upper chamber should not be too strong - the calmer, the better. The purpose is to prevent coffee powder from constantly churning with the water (but don't let the stove flame go out! The water will return to the lower chamber).
Step 5: Add Coffee Powder and Start Timing
After water rises halfway, add coffee powder and begin stirring, then start timing.
※ Pour 8 grams per cup (TCA-3 recommends minimum 16 grams for 2 cups). Begin the first stir, avoiding circular motions. Press the powder downward from top to bottom, creating opposing forces. Don't stir too long - just enough to disperse the coffee powder.
Step 6: Second Stir at 25 Seconds
Step 7: Third Stir at 55 Seconds, Turn Off Heat at 60 Seconds
※ For single-origin coffee, brewing time only needs 50 seconds (second stir at 20 seconds, third stir at 45 seconds)
Step 8: Handle Over-Extraction
If timing is not precise and exceeds 60 seconds, immediately wipe the lower glass chamber with a cold, wet towel after turning off heat. This method allows coffee to quickly descend to the lower chamber, reducing the problem of over-extraction.
