Introduction:

The Sumatra coffee, commonly known as Mandheling, originates from Sumatra Island in Indonesia. This island is Indonesia's second-largest island and the world's sixth-largest, covering an area of 470,000 square kilometers—thirteen times the size of Taiwan!

Despite its large size, not all of Sumatra Island produces coffee. Coffee trees are extensively cultivated only in the two northernmost provinces out of the island's eight provinces: Aceh Province and North Sumatra Province:

Aceh coffee is mainly produced in the Gayo Mountain area surrounding Lake Tawar, where most farmers are local Gayo indigenous people; while North Sumatra Province coffee is primarily produced in the Sidikalang region west of Lake Toba (the world's largest super-crater lake) and the Lintong region to the south, with local farmers mostly composed of Batak indigenous people.

Sumatra's coffee production system is unique: large coffee plantations on the island are few and far between. Instead, tens of thousands of small farmers not only grow and harvest coffee themselves but also extract coffee seeds with pulp from berries and sun-dry them in their own households.

However, when the green beans are not yet completely dry, the husks are removed... and then collected by small, medium, and large purchasers for phased drying before being transferred to exporters. When they reach exporters, sometimes they still need to be sun-dried again until moisture content meets standards before entering the bean selection room for manual removal of defective beans and impurities, followed by screening and packaging for export.

This unique semi-washed processing method is locally called Giling Basah, also known as wet-hulled. This system allows coffee beans to dry at a very slow rate, thus creating the distinctive rich Sumatra texture; although subsequent extensive manual labor is required to remove defects, the resulting full-bodied style is unparalleled anywhere in the world!
