What's the Difference Between Traditional Thai Coffee and Chain Store Coffee?
There are 4 key differences:
- Chain stores use only coffee beans. Thai coffee, in addition to coffee beans, also includes cardamom and other spices.
- Chain store coffee adds large amounts of milk, sugar, caramel, or other flavorings. Thai coffee typically only uses condensed milk and sugar.
- Chain store coffee beans generally originate from Colombia and other Central and South American regions, with generally high acidity. Although Thai coffee doesn't have specific requirements for coffee bean origin, it typically uses Southeast Asian-produced coffee beans, which generally have lower acidity.
- Chain stores use the distillation method to brew coffee, with high extraction temperatures, making the coffee more acidic than other methods. However, because of the large amount of milk added, the acidity isn't noticeable. If you order an Americano without milk, the acidity is very obvious.
Thai coffee uses the drip method, where acidity varies with water temperature but is absolutely less than the distillation method, resulting in lower acidity.
Practical Session
Ingredients:
- Coffee beans - today using Mandheling from Indonesia.
- Cardamom - this ingredient is generally hard to find. Besides buying online, you can probably only get it at specialty Southeast Asian food stores. Cardamom isn't commonly used in households, but if you like special aromas, you can also add a little to stews or curries.
The ratio of coffee beans to cardamom is 8:1. Cardamom has quite a strong aroma, so if you're afraid you might not be used to it, you can use less.
- Other spices - based on personal preference, you can add small amounts of cinnamon, cloves, etc. Today only cardamom was used.
- Sugar and condensed milk - for flavoring, amount according to personal taste.
Thai Coffee Preparation Method:
- Grind coffee beans and cardamom into powder. For dramatic effect, I used a hand grinder today. Of course, if you buy pre-ground, it's even simpler. I forgot to tell the shop to grind the cardamom, but fortunately, I have all the necessary equipment.
Here's what it looks like ground. Cardamom skins are difficult to grind finely, but it doesn't affect much.
- Brew coffee - today using manual drip brewing, which also has quite a dramatic effect. However, it gets progressively slower as it drips, related to the filter paper. If you want to make a larger cup and lack patience, it's best to brew in two batches, changing filter paper and coffee powder midway.
If you can't be bothered with all that, you can also let a coffee machine do the work.
- Finally, add sugar and condensed milk to taste.
Thai coffee can be served hot or cold, with or without milk. For cold coffee, use more coffee powder, first without adding sugar or condensed milk for flavoring, place in the refrigerator to chill, and when drinking, add ice, sugar syrup, and condensed milk to taste.
