India's Rich Coffee Heritage

India is, in fact, a country with a substantial coffee-bean industry: roughly 250,000 people make their living from this crop. Coffee likes warmth, and the band between the Tropics of Cancer and Capricorn is known as the coffee zone. Because intense heat can spoil a bean's character, however, most coffee is grown at altitude. India's main producing regions lie in the southern mountains. Rainfall there is not plentiful, yet irrigation systems still support the cultivation of medium- to high-quality beans. Single-origin enthusiasts may already know India's signature offering, Monsooned Malabar, a low-acid coffee with grain-like aromas.

The Monsooning Process

This particular bean is deliberately obtained through sun-drying. In the past, when transport was slow, shipping Indian beans to Europe, then the heart of coffee culture, took several months by sea. Over that voyage the high humidity and strong sea winds caused the beans to arrive larger in size and yellowish in color, and the flavors changed as well. Today, with faster shipping, producers must rely on artificial methods to replicate what nature once did. Farmers spread the beans evenly inside specially designed houses; during summer the monsoon winds off the Arabian coast bring high humidity, and after just a few thorough turnings over seven weeks the beans are ready for bagging. This saves a great deal of time while achieving the same aging effect as a four-month sea voyage.

Discovering Araku Coffee in Paris

Araku Coffee is a newer shop in Paris's well-known Marais district. Its storefront looks more like a clothing boutique from Tokyo than a European cafe, and it feels remarkably fresh next to the usual continental shops. Abroad, people tend to be bolder than they are at home. Although I had finished a cup of after-dinner coffee just two hours earlier, I still took my travel companion by the hand and went in to explore. A young woman greeted us warmly at once, even though we hardly looked like big spenders. We drank a single cup in the shop, which cost four euros - quite reasonable - and in return we received a lesson about Indian coffee beans.

The Araku Valley Origin

Araku Valley lies in the eastern mountain range, overlooking the Bay of Bengal. In 1995 it was designated a forest reserve, and it is rich in biodiversity with fertile soil. That excellent growing environment allows more than 500 villages to cultivate specialty coffee for their livelihood. Thanks to the valley's distinctive terrain and climate, the beans ripen slowly into coffee with ample aroma yet a mild character, which is why the southern monsoon sun-drying process described above is not required. To protect both the environment and the beans, everything from planting to harvesting is done by hand, with no chemicals used to speed up production. Under the guidance of people who care about the land and the industry, the Araku Valley has become the world's largest organic biodynamic coffee-growing area.

Araku Coffee Offerings

Araku Coffee keeps six different coffees in the shop, each with its own distinctive flavor profile, and each jar notes the brewing equipment it suits. Every jar smells remarkably fresh, and the aroma of the coffee oils was enough to make me finish my cup before the introduction was even half over. "Araku" means "red soil" in the local eastern dialect, and the brand carries that red-soil color through to its packaging. The vivid tins almost make you want to take a few home as souvenirs - unfortunately, my suitcase had no room to spare.

Indian Coffee Bean Brand Recommendations
