Ethiopian Coffee Heritage

The wild coffee trees native to Ethiopia are the ancestors of all Arabica coffee beans worldwide. Ethiopian coffee is highland coffee, carefully cultivated by hand. Longberry Harrar, similar to Mocha, is often used as a substitute for Mocha and is also known as Ethiopian Mocha. It features high acidity, rich wine-like flavor, mild yet intense taste, high yield, and pleasant aroma. As for regular Ethiopian coffee beans, they have a neutral flavor profile and rank below Ethiopian Mocha in grade, with various drawbacks. A large area in southwestern Ethiopia still grows wild Arabica coffee trees, with coffee beans harvested directly from the ground. These regions include Djimma, Sidamo, and Kaffa. In recent years, producers have begun focusing on improving harvesting and bean processing methods, and the coffee industry has expanded. However, coffee beans from wild trees are still processed using wooden mortars and other primitive methods. Some believe the name "coffee" originates from Kaffa, the native habitat of coffee trees. All legends and anecdotes about coffee's discovery are centered in Ethiopia. People initially didn't view coffee as a beverage but as food. Nomadic Gallas people would roast the beans, grind them into powder, mix with butter, and shape into hard round balls as travel food. However, because coffee was an important export commodity from Yemen's Mocha port in its early days, some mistakenly believed Mocha was coffee's native habitat.

Ethiopian Coffee Varieties

Mocha derives its name from Yemen's former Mocha port, characterized by long berries, soft flesh, and wine aroma, typically light roasted. Harrar Mocha possesses unique fragrance and acidity, belonging to light roast. Yirgacheffe grows on high mountains at high latitudes, featuring wine-like acidity, rich aroma, and belongs to light to medium roast. Ethiopia grades coffee beans based on the percentage of defective beans mixed in, from No.1 to No.8.
