Joseph Brodsky, like other green bean producers, researchers, and enthusiasts, ventured deep into the remote mountainous regions of Ethiopia, searching for Geisha tree varieties in the wild, primitive forests where coffee originated. Although unsuccessful in his initial quest, he believed that among these forests of many native species, there still existed many excellent, unknown native varieties—possibly undiscovered due to their remoteness or unrefined processing and cultivation methods. Therefore, the following year, Joseph Brodsky immediately invested significant effort in Ethiopia, seeking valuable coffee bean varieties and collaborating with local estates to improve and refine green bean processing techniques. He established the Profile Processing system for green beans, allowing each bean to fully express its complete flavor profile. In 2009, Joseph Brodsky began cultivating Ethiopian native Geisha varieties in Panama, purchasing land to create the "Ninety Plus Geisha Estate" while simultaneously building the Ninety Plus Sensory Room. In recent years, developing the Solkiln™ special processing method, Ninety Plus has continuously innovated in every aspect of green bean processing, leading the pack in the specialty coffee market.

Profile Processing System

The Profile Processing system is tailored for each bean variety—cultivation, harvesting, processing, and other procedures are customized. Through repeated cupping and calibration, it ensures each coffee variety expresses its unique fruit flavors to their fullest potential.

Solkiln™ Special Processing Method

In 2013, Ninety Plus pioneered the Solkiln™ special processing method, utilizing wood drying chambers to dry coffee beans. After timber is felled, it is typically placed in wood drying chambers where temperature, humidity, and air circulation are controlled and adjusted to reduce the wood's moisture content to 10-12%. Joseph Brodsky applied this exact same concept to create the new Solkiln™ (SK) special processing method, officially launching two premium green bean products in 2013: Lotus Solkiln H2 and Silvia Solkiln N2.

Ninety Plus's Unique Flavor Grading and Code System

Ninety Plus coffee is classified according to "fruit flavor intensity," differing from traditional processing method classifications of Washed, Honey, and Natural. While also categorized into three types—W2, H2, N2—different processing methods create different levels of fruit flavor. Therefore, you might find washed or natural processed coffee beans within the Honey flavor "H2" category.
