The warm air heats the mountainsides, allowing high-quality coffee to grow and thrive at such high altitudes without being damaged by frost. Some of the best coffee plantations are located in the valleys between mountains, where unique microclimates help coffee develop distinctive flavors. Huehuetenango coffee has a personality with strong body and intense aroma, yet coffee from this region can also be incredibly diverse and varied. Beyond exhibiting rich chocolate flavors, it carries aromas of pear, apple, and cinnamon. With abundant rainfall and year-round cloud cover, the climate is similar to Cobán with only minor differences. Formerly a volcanic area, the soil contains metamorphic rocks. The minerals in the soil are balanced by the abundance of metamorphic rocks. Coffee cultivation here differs significantly from typical Guatemalan volcanic regions. New Oriente coffee grows in volcanic soil, but without volcanic activity during the growing period.
