Gesha Village Coffee Varieties
In order to fulfill their mission of growing the world's best coffee, Gesha Village maintains strict control from the very beginning of the selection process. They send coffee seeds collected from the Gori Gesha forest, located 20 kilometers from the Gesha Village estate, to professional institutions for genetic testing to determine this as the original collection site of the Panama Gesha variety. Subsequently, by studying coffee tree morphology, bean appearance and size, as well as cupping results, they select the Gesha varieties closest to today's Panama Gesha and begin nursery cultivation. Due to the extremely large estate area, the owner divided Gesha Village into 8 major districts for better management and product differentiation, then further numbers each batch internally to facilitate batch distinction. It's worth mentioning that while some Gesha estates in certain regions may not have significant differences between batches due to their smaller scale, for a large estate like Gesha Village, the differences between various plots are equivalent to the differences between estates in Panama, making this distinction essential.
Gesha Village Coffee Processing Methods, Harvesting and Processing
With the support and cooperation of local residents, they have successfully trained a group of high-level harvesters and processing plant workers. "Only pick the most mature coffee cherries," "don't take ones that have fallen on the ground or are damaged"—these are the requirements that every worker is instructed to follow, while harvesting mentors teach workers what coffee is most mature and which cherries are damaged. When the coffee processing method involves drying on drying beds, additional screening is conducted to select out insect-damaged beans and green-colored coffee beans. Furthermore, all drying environments first undergo shade-drying to avoid rapid sun exposure that would make the coffee shell too brittle and cause it to crack.
Chaka is a limited project brand under Gesha Village. In 2011, Gesha Village established itself in Bench Maji, the gateway to Ethiopia's native Gesha forest, just 20 kilometers away. While continuing to care for and cultivate nursery-stage plants, carefully transplanting and planting them, and following best agronomic practices, they began to select better-flavored varieties, reducing the original six varieties to three: Gori Gesha Forest, Gesha 1931, and Illubabor Forest. Chaka is the original variety growing in the Gori Gesha Forest. This quality-based, quality-focused approach allows Gesha Village's trees to realize their inherent quality, maximize their potential, and produce amazingly flavorful coffee.
